You’ll see our old favorite crockpot pinto beans and cornbread, I make some tuna salad, then I will fry up some old fashioned salmon patties, and I will share a tasty and easy crockpot ranch pork chop meal with some yummy roasted skillet corn I had to have after seeing my friend Katt @our252life frying some up. Bush's Best Family Cafe'
It's actually Bush's Pinto Bean Pecan Pie. Delicious! Here's the recipe..
Ingredients:
(1) unbaked 9 pie crust
(1 1/2 c.) sugar
(1c.) margarine (melted)
(1 Tsp.) vanilla
(3/4c.) Bush's Pinto Beans (heated & lightly mashed)
(1c.) finely chopped pecans
(2) eggs, well beaten
(1/4c.) pinto bean juice reserved from can.
Directions:
1) Drain the Pinto Beans saving 1/4th of the liquid to be
used when combining the other ingredients.
2) Combine all the ingredients and pour into unbaked pie shell.
Bake:
Regular oven: 350 degrees for 45 min.
Convection oven: 325 degrees for 45 minutes
Center of pie will be slightly unset.
Can be frozen.
Yields 6-8 servings.
