How To make Pickled Dilled Beans
4 lb Fresh tender green beans
OR yellow beans :
(5 to 6 inches long) 8 -to...
16 Heads fresh dill
8 Garlic cloves (optional)
1/2 c Canning or pickling salt
4 c White vinegar (5 percent)
4 c Water
1 t Hot red pepper flakes

Procedure: Wash and trim ends from beans and cut to 4-inch lengths. In each sterile pint jar, place 1 to 2
dill heads and, if desired, 1 clove of garlic. Place whole beans upright in jars, leaving 1/2-inch headspace. Trim beans to ensure proper fit, if necessary. Combine salt, vinegar water, and pepper flakes (if desired). Bring to a boil. Add hot solution to beans, leaving 1/2-inch headspace. Adjust lids and process according to the recommendations in Table 1. Table 1. Recommended process time for Pickled Dilled Beans in a boiling-water canner. Style of Pack: Raw. Jar Size: Pints. Process Time at Altitudes of 0 - 1,000 ft: 5 min. 1,001 - 6,000 ft: 10 min.

Make Regular AND Spicy DILL GREEN BEANS
Its green bean season and I want to show you how I make regular and spicy Dill Green beans. Below is the recipe for both variations. I made half of each recipe but this is the full recipe.
Regular Dill beans
3 lbs green or yellow beans
3 3/4 cups white vinegar
3 3/4 cups water
1/3 cup pickling salt
6 cloves garlic crushed
6 sprigs Dill
Spicy Dill Beans
2 lbs green or yellow beans
2 1/2 cups white vinegar
1/2 cup white wine vinegar
1 1/2 cups water
2 Tbsp sugar
3 Tbsp pickling salt
Mix above ingredients and bring to a boil
8 Red Thai chili peppers (leave intact but cut slit down side)
4 garlic cloves crushed
2 tsp mustard seeds
2 tsp crushed pepper corns
8 sprigs Dill
In each jar add 1/2 tsp of ground pepper, 1/2 tsp mustard seeds, 2 sprigs of dill and two peppers

How to can Dilly Beans.
Here's another canning recipe. Our kids love dilly beans. They are a spicy pickled bean that has a crispy crunch when you bit into them.
Dilly Beans:
1 clove garlic
1t. sugar
1/4 t. alum
1t. crushed red pepper
Fresh dill
Jalapeno peppers (optional)
Place ingredients in quart size jars, then add beans.
Mix:
6c. vinegar
13c. water
1c salt
3/4 t. dried dill weed
Boil hard and pour over beans
Boil in water bath for 5-7 mins.
Note: This recipe is what works for me, but always adjust your canning times to what works for you and your location.
