How To make Pesto Pasta and Vegetables
8 oz Medium shell pasta (3 cups)
1 T Olive or vegetable oil
2 ea Leeks, halved lengthwise,
- sliced (3 cups) 1/2 c Drained, marinated sun-dried
- tomatoes (from 8 oz jar) 1/4 c Sliced ripe olives
3 ea Hard-cooked eggs, chopped
1/2 c Purchased pesto
2 T Shredded Parmesan
1. Chop the sun-dried tomatoes. Meanwhile, cook pasta to desired
doneness as directed on package; drain. Keep warm.
2. Heat oil in large nonstick skillet over medium-high heat until
hot. Add leeks; cook and stir until tender. Reduce heat to medium; stir in tomatoes and olives.
3. Add pasta to skillet. Cook over medium heat until thoroughly
heated, stirring occasionally. Add eggs and pesto; cook and stir 1 to 2 minutes or until thoroughly heated. Remove from heat; sprinkle with
cheese.

2 cups Fresh Basil Leaves
6-7 Garlic Cloves
1/2 cup Cashew/Walnuts/Pine Nuts
2 tbsp Olive Oil
1/4 cup Parmesan Cheese
1/4 tsp Salt
1/4 tsp Pepper
4 tbsp Olive Oil
1/2 cup Olive Oil
Pasta Preparation:
2 cups Fusilli Pasta/Spiral Pasta
1 tsp Salt
2 tbsp Oil
1 tbsp Finely Chopped Garlic
Bell Peppers
Zucchini
Cherry Tomatoes
Boiled Broccoli
1/2 cup Stock
Salt
3-4 tbsp Pesto Sauce
Boiled Pasta
Fresh Basil
For Garnishing:
Chili Flakes

Pesto Pasta Salad
Don't skimp on pesto, and don't be shy with olive oil. If you do, you'll end up staring at a mound of flavour-lacking, dry pesto pasta salad, thinking darn it, I should have just followed the recipe!.
PS Just 2 tablespoons of mayo is the secret here. Just gives an edge of creaminess without weighing it down, plus significantly improves the quality of next-day leftovers - prevents it from drying out.
TIP: Homemade pesto obviously rules here, but if you need to resort to store-bought, get it from the fridge rather than aisle. It's better.

Penne pasta tossed with fresh vegetables in pesto sauce.
PESTO VEGETABLE PASTA
Ingredients
200 grams penne paste, boiled
½ cup corn kernels, boiled
1 medium red capsicum, diced
2 tablespoons olive oil
2 tablespoons chopped garlic
1 teaspoon red chilli flakes
Salt to taste
2 cups milk
1 tablespoon grated parmesan cheese
A fresh basil sprig for garnishing
Pesto
¾ cup fresh basil leaves
3 tablespoons pine nuts (chilgoza)
3-4 garlic cloves
¼ cup grated parmesan cheese
Salt to taste
6 tablespoons olive oil
4-5 black peppercorns, crushed
Method
1. To make pesto, blend together basil leaves, pine nuts, garlic, parmesan cheese, salt, olive oil and crushed peppercorns to a smooth paste.
2. Heat olive oil in a non-stick pan. Add garlic and chilli flakes and sauté till garlic turns light brown.
3. Add corn kernels and capsicum, mix and sauté on high heat for a minute. Add pesto and mix. Add salt and mix again.
4. Add milk, stir and cook for a minute. Add pasta, mix well and cook till it is heated through.
5. Add parmesan cheese and mix well.
6. Garnish with basil sprig and serve hot with garlic bread.
