How To make Bowtie Pasta with Creamy Cilantro Pesto
1/2 pound bowtie pasta
1/2 cup low-fat cottage cheese
*
1/4 cup plain lowfat yogurt
1/2 cup chopped cilantro
1/2 teaspoon salt
2 teaspoons olive oil
3 cloves garlic :
minced
1/8 teaspoon red pepper flakes
3 tablespoons grated Parmesan cheese
* To make vegan, replace cottage cheese and yogurt with 1/2# firm tofu.
Cook pasta in boiling, salted water until al dente. Meanwhile, combine cottage cheese, yogurt, cilantro, and salt in blender or food processor. Process 30 seconds.
Heat oil in small skillet over medium heat; add garlic and cook until aromatic, about 1 minute. Add red pepper flakes; remove from heat. Drain pasta; toss with sauce and garlic in serving bowl. Sprinkle with Parmesan.
Variation: Saute slivered onion and sweet red and yellow bell pepper strips along with garlic. Cook 3 minutes, or until crips-tender. Proceed with recipe.

How to make Easy Bowtie Pesto Pasta Salad
In this quick video, Dr. Kirby and I will teach you how to make an easy bow tie pesto pasta salad. Just like we taught our students via zoom. You don't want to miss it.

16 oz of your favorite pasta and cook according to directions
1-2 Tablespoons of pesto (or to taste)
1 teaspoonful of olive oil (or to taste)
1 4oz container of goat cheese or other options like feta crumbles, parmesan, mozzarella, etc.
1 container of cherry tomatoes
you can add other ingredients like asparagus, spinach, kale, broccoli, mushrooms, etc. Cut your vegetables into 1-inch pieces or to your liking. Add pasta and veggies together and mix. After mixing add in the pesto and olive oil and mix well. A little pasta water can help spread the pesto.

Farfalle pasta salad with shrimp, green beans, red onions, cherry tomatoes and jalapeños
Cilantro Lime Pasta Salad
This cold salad is fresh and bright with a tangy dressing that is perfect for spring and summer. This is a great side dish for anything you are grilling or would be a terrific main dish.
Recipe as follows:
Dressing: 1/2 cup plain greek yogurt
1/4 cup fresh lime juice
1/4 cup chopped cilantro
2 garlic cloves minced
1/2 tsp. salt
1 Tbsp mayonnaise
blend together, put in fridge.
Salad: 8 oz bow tie noodles, cook according to directions
1 1/2 cup corn
1 1/2 cup cherry tomatoes, halved
1/2 red onion, chopped
1 or 2 avocados, diced
2 Tbsp chopped cilantro
jalapeno seeded and chopped to taste
Mix salad ingredients together in a bowl and top with dressing. Mix and enjoy.

This pesto pasta salad is so fresh and easy! The combination of cold pasta, vibrant pesto, creamy mozzarella, and cherry tomatoes is a match made in heaven.

Ingredients
1 box farfalle pasta (bow tie)
1/2 cup basil pesto
1 1/2 cups pearl mozzarella
32 cherry tomatoes or 12 oz
Instructions:
1. Bring a pot of water to a boil then generously salt the water and add the Farfalle pasta to the pot. Cook al dente.
2. Once the pasta is done cooking, pour it into a colander and rinse with cold water to stop the pasta from cooking.
3. Now place the pasta into a large bowl and stir in the pesto, pearl mozzarella, and sliced cherry tomatoes. Serve chilled.
