How To make Peanut Butter/Bran Muffins
1/2 c Whole Wheat Flour
1/3 c Bran
2 ts Baking Powder
1 tb Sugar
1 Egg
1/4 c Peanut Butter
1/2 c Lowfat Milk
1/3 c Peanuts, chopped
Combine the flour, bran, baking powder and sugar in a bowl. Add the remaining ingredients and blend. Spoon into oiled muffin tins or paper muffin cups. Bake in a 375-degree oven for 15 to 20 minutes. Peanut Butter Bran Muffins
For this recipe, we have first prepared a mixed dough using regular flour and wheat bran. Maybe the combo seems dull at first sight, but inside you’ll discover a pleasant surprise - a delicious and creamy peanut butter filling. Serve these muffins with some fruit on top and a touch of your favorite jam!
INGREDIENTS
2 ounces (55 grams) butter, melted
1 egg
1 tablespoon olive oil
1/2 cup (70 grams) flour
1/2 cup (30 grams) wheat bran
1/2 cup (100 grams) sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup (125 ml) milk
2 ounces (55 grams) red grapes
4 ounces (110 grams) peanut butter
For the topping:
Cherry jam
Redcurrants
PREPARATION
Place the melted butter in a bowl.
Add the egg, and olive oil. Whisk everything until smooth.
Place the flour in a separate bowl. Add the wheat bran, sugar, cinnamon, baking powder, and baking soda. Whisk.
Slowly add the melted butter mixture and milk, while whisking in the process, until you obtain a smooth mixture. Add the grapes and mix for half a minute more. The mixture should be enough for you to obtain 8 muffins.
Preheat the oven to 350°F/175°C.
Place the mixture into individual muffin molds. Add 1 teaspoon of peanut butter inside each muffin.
Bake the muffins for the next 25 minutes.
You can serve the muffins with cherry jam and your favorite red fruits on top.

Instructions and macros:
In a medium sized bowl add 1 3/4 cup (100g) wheat bran
1/2 Cup (40g) oats
1 1/2 Tbsp (18g) sugar substitute
1/2 Tbsp (5g) ground cinnamon
1 Tsp baking powder
Pinch of salt
Combine and set aside
In a separate bowl get together your wet ingredients
2 mashed bananas
1/2 Cup (122g) unsweetened applesauce
1/2 Cup (113g) non-fat greek yogurt
1 Egg & 2 egg whites
1 Tsp of vanilla extract
Mix thoroughly
Pour wet into the dry and combine
Pour batter into a well greased muffin tin and fill the tins to the top
You should end up with about 7 muffins
Bake at 350 degrees | 177 Celsius for 45-50 minutes

Are you looking for a low sugar (but still sweet) oil free (but still super moist) Home made bran muffin recipe? Then this 1938 Depression Era Bran Muffin Recipe is for you! The recipe uses dates, but you could easily make these as a raisin bran muffin.
Ingredients:
250 mL (1 cup) thick, full fat sour cream
125 mL (½ cup) white sugar
1 egg
250 mL ( 1 cup) all purpose flour
5 mL (1tsp) baking soda
500 mL (2 cups) bran
5-6 dates, chopped
2 mL (½ tsp) salt
Method:
Preheat oven to 180ºC (350ºF)
Combine sour cream, sugar and egg until smooth.
Mix flour and baking soda, then mix into sour cream.
Mix in bran, salt, and dates.
Portion into a 12 cup muffin tin, and bake 20-25 minutes
