1 c Whole wheat flour 3/4 c Regular flour 1/4 c Sugar 4 ts Baking powder 1/2 ts Salt 1 Egg 1 c Skim milk 1/4 c Vegetable oil 1/4 c Creamy peanut butter 1/4 c Favorite jelly, preserves, Etc pan. In large bowl, mix flour, sugar, baking powder and salt. In small bowl, beat egg, milk and oil until blended; stir into flour mixture just until moistened (batter will be lumpy). Fill muffin pan cups 1/3 full of batter. Drop about 1 teaspoon each of peanut butter and jelly in center of each; top with remaining batter. Bake 20 minutes or until golden. Best served warm. Cookmas Day 2, Peanut Butter & Jam Muffins, Quick and Easy Recipe
Hey guys and welcome to my channel!! Today is Cookmas Day 2 and I will be making a sweet breakfast treat and twist on an old classic, I will be making some peanut butter and jam muffins. These muffins have the one of the most perfect combos on the planet in which we have a delicious peanut butter muffin topped off with a tasty jam swirl. 2 cups flour 2/3 cup sugar 1 Tbsp Baking Power 1 pinch Salt 1/3 cup Vegetable Oil 2 large Eggs 1 cup Milk 1 cup Peanut Butter 1 cup of your favorite Jam
Instructions:
Pre-heat oven to 375 degrees Spray your muffins tin(s) with non stick spray. This is helpful because the jam can overflow while baking. Line your muffins tin(s) with cupcake liners
In a large bowl, combine all your dry ingredients. Add in your milk, eggs, oil, and peanut butter. Combine until well-mixed. Fill each muffin cup about halfway full then add a dollop of jam to each. Use a toothpick to swirl some of the jam into the batter mixture just so it won't burn while in the oven. Bake for 17-18 minutes or until a toothpick inserted into the muffin comes out clean . ENJOY!!
