Homemade Peanut Butter Cups Recipe (With a Pro-Tip for Melting Chocolate!)

These are the BEST copycat version of Reese's Peanut Butter Cups.
They are simple to make and using this method for melting chocolate will change the way you melt chocolate forever! SO simple!

Full Recipe:

Recipe:
1/2 cup peanut butter
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt
12 ounces chocolate chips (this is about 2 cups of chocolate chips)
1 tablespoon coconut oil optional

INSTRUCTIONS
Line a muffin tin with silicone liners or paper liners.
In a mixing bowl, beat together the peanut butter, powdered sugar, and salt together until well combined.
Melt the chocolate in the microwave for 30 second intervals until melted or melt chocolate using the slow cooker method (preferred method--see below). Add in melted coconut oil, if using, to melted chocolate and stir until well distributed.
Using a small cookie scoop, place 1/2 tablespoon melted chocolate in each liner. Swirl the chocolate to cover the bottom of the muffin liner.
Place muffin tin in fridge or freezer for 5 minutes for chocolate to harden.
Once the bottom layer of the peanut butter cup has hardened, remove from fridge/freezer. Take about 1/2 tablespoon to 1 tablespoon peanut butter and form a disc that is just smaller than the mold so that there is room for chocolate to go around the edges. Place the peanut butter in the center of the chocolate base.
Place 1-2 teaspoons of the remaining melted chocolate over the peanut butter layer. Use a spoon to spread evenly.
Place the peanut butter cups back in the fridge/freezer for 5-10 minutes to harden.
Remove from silcone liners and serve or store in the refrigerator for up to 4 days (if they last that long.)
Melting Chocolate in Slow Cooker
Place chocolate in heat safe glass jar.
Place jar in slow cooker and then carefully pour water into slow cooker until the water line reaches halfway up the jars. Be cautious not to get any water into the jar of chocolate.
Turn slow cooker on high, do NOT put lid on the slow cooker, and in about 30 minutes your chocolate will be perfectly melted (no need to stir while chocolate melts). Check on chocolate after 20 minutes, as all slow cookers vary in temperature.

The other day in the supermarket, I found Reese's Peanut Butter baking chips and immediately I knew these would make such tasty and delicious chocolate peanut butter muffins. In this video, I'm sharing my recipe for my super soft chocolate muffins, it's buttery, moist, and light and I used my Reese's baking chips and the muffins were so so yummy. And it's sweetened with brown sugar.
Officially my favorite peanut butter chocolate muffin recipe ever. If you can't find peanut butter baking chips, I think these muffins would taste awesome with chocolate chips too. Enjoy the recipe!

Chocolate muffins with peanut butter chips recipe
1/3 cup butter (76g)
1 cup brown sugar (175g)
2 eggs
1 tsp vanilla
1/3 cup yogurt (70g)
2/3 cup milk (128ml)
1 cup + 2 tbsp flour (152g)
1 tsp baking powder
1/4 tsp salt
1/4 baking soda
1/3 cup cocoa powder (30g)
1 tsp vinegar
1/2 cup Reese's peanut butter chips / chocolate chips

bake at 180c/350f for 18 mins

makes 12-14 muffins
Ingredients:
1¾ cups (220g) All-purpose flour
1/2 cup (100g) Brown sugar
2 teaspoon Baking powder
1/4 teaspoon Baking soda
1/4 teaspoon Salt
1/4 teaspoon Cinnamon
3 ripe medium Bananas
1/2 cup (120g) Peanut butter, natural
1/3 cup + 1 Tbsp (100ml) Vegetable oil
1 egg
1/2 cup (120ml) Milk
1 teaspoon Vanilla extract

Directions:
1. Preheat oven to 350F (175C).
2. In a large bowl stir flour, baking powder, baking soda, cinnamon and salt. Set aside.
3. In a separate bowl, mash the bananas, add sugar and stir until combined. Add peanut butter and stir until combined and smooth. Add oil, milk, egg, vanilla and whisk until well combined.
4. Add flour mixture to the wet ingredients and stir until incorporated.
5. Divide between 12 muffin cups. Bake for 15-18 minutes, or until an inserted toothpick comes out clean. Let cool.

1 box chocolate cake mix
4 large eggs
1 cup milk
1/4 cup oil (vegetable or canola oil)
2 heaping Tablespoons plain Greek yogurts
30 mini Reese's Peanut Butter Cups , divided

For the Peanut Butter Frosting:
1/2 cup butter (1 stick), room temperature
1 1/2 cups creamy peanut butter
2 cups powdered sugar
1 teaspoon vanilla extract
2-3 Tablespoons milk

Reese Peanut Butter Cups are my favorite candy and this healthy recipe will allow you to indulge without the guilt. This healthy peanut butter cup recipe only has 4 simple ingredients. This homemade Reese Cup recipe makes a healthy snack or healthy dessert recipe that you will love. They get messy as they thaw, so I prefer to eat them as a cold freezer treat. Like a healthy ice cream treat.

Homemade Peanut Butter Cups Recipe:

- 1 cup peanut butter (natural shelf peanut butter)
- 4 TBSP honey (raw honey is best)
- 4.5 ounces dark chocolate bars which is 1/2 cup (or semi sweet morsels or milk chocolate)
- 1 tsp. coconut oil

1. Mix peanut butter and honey until smooth.
2. Put peanut butter mixture in the freezer while making chocolate mixture. (10-15 minutes)
3. Mix chocolate and coconut oil. (if using bars, break into small pieces)
4. Melt chocolate mixture in the microwave in 1 minute intervals until completely melted.
5. Remove Peanut butter mixture from freezer and form into patties.
6. Add small spoonful of chocolate to the bottom of silicone muffin pan
7. Place peanut butter patty on top of chocolate and top with more chocolate until complete covered.
8. Place in freezer for 30 minutes or until solid.
9. Pop out of silicone molds and put in freezer bag to store in the freezer or refrigerator.
10. ENJOY!
