Creamy Roasted Red Pepper Pasta with Black Pepper Chickpeas. Elbows pasta in roasted red pepper sauce with crisp black pepper thyme Chickpeas and fresh Basil. Vegan Soy-free Recipe.
This pasta has a simple roasted red pepper sauce and pasta of choice. Topped with peppery herbed chickpeas and fresh basil, the flavors come together amazingly. Crisp up the chickpeas on a skillet or in an oven. Meanwhile, cook the pasta, blend up the sauce, combine and bring to a boil. Add veggies if you like. Serve loads of pasta with a good helping of the chickpeas.

Ingredients:
1 tbsp oil
1 medium onion finely diced
1 medium (52 g) stalk celery finely diced (1/2 cup)
10 oz fresh (280 g) mushrooms finely diced (or 1 oz dried)
2 medium (200 g) carrots finely grated
4 cloves garlic finely minced or crushed
2 tsp Italian seasoning or use 1 tsp each of dried oregano and basil
1 tsp onion powder
1 tsp coconut sugar or sweetener of choice
Pinch of red pepper flakes or to taste
Salt and black pepper to taste
1/3 cup (80 ml) red wine or use more vegetable broth
3 cups (750 g) crushed tomatoes or marinara sauce or tomato sauce
2 cups (480 ml) vegetable broth
1 bay leaf
1 cup (200 g) dry lentils I used brown, soaked
1 tbsp soy sauce gluten-free if needed or tamari
1 tbsp balsamic vinegar
1/2 cup (120 ml) plant-based milk
1 tsp cornstarch
8 oz (225 g) spaghetti gluten-free if needed or pasta of choice
Vegan Parmesan or nutritonal yeast to garnish (optional)

Red lentil Penne is a gluten free plant based pasta made using red lentils. It’s rich in natural protein and fiber.
Cook the Penne pasta as per instructions in package and keep it ready. I added more garlic for nice flavor. If you are using red onion and red bell peppers , it will give more color to the pasta.
The seasonings and tomato sauce quantity can be adjusted as per your taste. Cook the chicken with salt and pepper and shred it. I have used Mozzarella cheese here, but you can use Parmesan or Cheddar cheese also.

4 medium bell peppers any color
2 tablespoons extra virgin olive oil
1 large onion chopped
3 cloves garlic pressed
½ teaspoon cumin
½ teaspoon turmeric
¼ teaspoon red pepper flakes
1 cup (200 grams) rice
1 can (15 oz) (240 grams) lentils drained and rinsed
1 can (15 oz) (400 grams) diced tomatoes
1 teaspoon salt
¼ teaspoon black pepper
2 cups (500 grams) vegetable broth
½ cup (15 grams) parsley chopped

------ Boiling Pasta ------
- Water as required
- Salt 1 tsp
- Olive Oil 1 tbsp
- Penne Rigate Pasta 500gm
------ Cooking Pasta ------
- Olive Oil 2 tbsp
- Minced Garlic 2 tbsp
- Chopped Onion 1/4 cup
- Tomato Paste 1/2 cup
- Black Pepper 1/2 tsp
- Oregano 1/2 tsp
- Red Chilli Powder 1 tsp
- Chilli Flakes 2 tsp
- Salt 1 tsp
- Sugar 1 tsp (optional)
- Heavy Cream / Whipping Cream / Double Cream 1.5 cups (ALTERNATIVELY, on a separate pan, combine 3/4 cup of milk and 1/4 cup of melted butter for every cup of heavy cream, so that the pasta will be tasty and creamy!)
- Grated Mozzarella/Cheddar Cheese
- Butter 2 tbsp
