How To make Orange Rice Muffins
1 c Mashed banana
1/2 c Orange juice concentrate
2 tb Oil
1 1/4 c Rice flour
1 1/2 ts Cornstarch-free baking powde
In large bowl mix, bananas, orange juice concentrate, and oil. Add flour and baking powder. Blend well. Fill six 2 1/2 inch nonstick muffin cups 2/3 full. Bake at 375 for 20-25 minutes. Turn out onto a wire rack to
cool. Variations: add 1/2 cup raisins, 1/2 cup sliced almonds, 1/2 cup chopped dates (no sugar), or 1/2 cup well drained crushed pineapple. For apple rice muffins, substitute apple juice concentrate for orange juice concentrate.

많은 분들이 좋아해주시는 저의 오렌지파운드 케이크를 떠올리며 이 머핀을 만들어 봤는데요,

오렌지 머핀
6개 분량
갈색설탕 90g
오렌지 제스트 1-2 큰술
중력분 185g
베이킹파우더 7g
소금 두 꼬집
달걀 2개
식용유 (녹인버터) 55g
플레인요거트 45ml
우유 45ml
오렌지주스 90ml
바닐라 익스트랙 1 작은술
- 오렌지 아이싱
슈가파우더 50g
오렌지주스 약 1 큰술 (조절)
준비해주세요 ✔️
* 모든 재료는 실온으로 준비합니다.
* 머핀팬에 종이틀을 둘러줍니다.
* 오븐을 190도로 예열합니다.
1. 깨끗한 볼에 설탕과 오렌지 제스트를 넣어 골고루 섞어줍니다.
2. 중력분, 베이킹파우더, 소금을 넣어 혼합합니다.
3. 다른 깨끗한 볼에 나머지재료를 모두 넣어 섞어줍니다.
4. 가루류에 3번 볼을 넣어 모두 잘 혼합합니다.
5. 머핀틀에 반죽을 고르게 분할해준 후 190도로 예열된 오븐에 약 18-20분 구워줍니다.
6. 완전히 식힌 머핀 위에 오렌지 아이싱을 올려줍니다.

Method: Put Some Rice in Half of the Muffin Tray Spaces. Place Muffin Papers in Each Space and Fill With the Muffin Mixture. Note That Where the Rice Was Used the Paper Is Dry, and Where There Is No Rice It Is Covered With Oil.
