How To make Orange Almond Biscotti
2 c Flour; unbleached, all purp
1 c Sugar
1 ts Baking soda
1/4 ts -Salt
2 Eggs, large
1 Egg yolk, large
1 ts Vanilla
1 tb Orange zest; freshly grated
1 1/2 c Almonds, whole; toasted
-lightly & chopped coarse
EGG WASH:
1 Egg, large; beaten with
1 ts -Water
From the bakery in Greve, in Chianti, Italy. In the bowl of an electric mixer, fitted with a paddle attachment, blend the flour, the sugar, the baking soda and the salt until the mixture is combined well. In a small bowl whisk together the whole eggs, the yolk, the vanilla and the zest, add the mixture to the flour mixture, beating until a dough is formed and stir in the almonds. Turn the dough out onto a lightly floured surface, knead it several times and halve it. Working on a large buttered and floured baking sheet, with floured hands form each piece of dough into a flattish log 12 inches long and 2 inches wide, arrange the logs at least 3 inches apart on the sheet, and brush them with the egg wash. Bake the logs in the middle of a preheated 300F for 50 minutes and them cool on the baking rack for 10 minutes. On a cutting board, cut the logs crosswise on the diagonal into 1/2 inch thick slices, arrange the biscotti, cut sides down, on the baking sheet and bake them, in the 300F oven for 15 minutes on each side. Transfer the biscotti to racks to cool and store them in airtight containers. MAKES: about 48 BISCOTTI SOURCE: Gourmet, December 1992

Toasted Almond/Orange Biscotti
AP Flour 12 oz.
Sugar 10 oz.
Butter, melted 2 oz.
Eggs 3 EA (about 5.25 oz)
Vanilla Extract ½ teaspoon
Candied Orange Peel, minced 2 oz.
Toasted Almonds, chopped 2 oz.
*Straight Dough Method
1. Combine all ingredients. Mix only to combine
2. Roll into equal 2 logs. Bake 350 F for 15-17 minutes
3. Cool completely. Slice into bars. Dry out at 250F for 20-25 minutes on each side. Do not darken in color.

Dark Chocolate, Almond and Orange Biscotti

Chocolate Almond Biscotti
1 stick of butter (8 Tbsp) – room temp
1 cup sugar
-Mix together the butter and sugar so that it is creamy
Add 1 egg, mix together well.
Then add:
3/4 tsp salt
3/4 tsp baking powder
Zest of one orange or 2 Tbsp. orange marmalade
1 tsp. vanilla
Stir well.
Add:
Chopped almonds (3/4 cup)
8 oz dark chocolate (chopped)
Mix together well.
Add 2 cups flour and stir forming a stiff dough.
Pre-heat oven to 375 degrees.
Mix together well and form by hand into a ball of dough.
Divide the dough in half or three parts and make 2-3 oblong logs and flatten out on a cookie sheet so that the dough is about 2 inches wide.
Bake the logs on a cookie sheet covered with parchment paper for 10-12 minutes at 375 degrees.
Take the logs out of the oven and cool for 20 minutes.
Next cut the biscotti in lengthwise pieces (about 12-16 cookies a log) -like slicing bread.
Place the cookies back on the baking sheet and bake again for another 8-10 minutes.
Cool and place in an airtight container.

Orange Almond Biscotti!
Hi everyone! Today, I made Orange Almond Biscotti and they turned out amazing! The sweetness is just perfect and it is overall a very simple process! Hopefully, you give these a try and enjoy these as much as I did!
Recipe:
Ingredients:
- 2 cups of all-purpose flour, sifted
- 3/4 cup of white sugar
- 2 teaspoons of baking powder
- 1/4 teaspoon of salt
- 2 teaspoons of orange zest
- 1/4 cup of orange juice
- 1 cup of sliced almonds
- 2 tablespoons of cranberries
- 2 tablespoons of cornstarch
- 4 tablespoons of water
- 1 teaspoon of vanilla extract
- 1 tablespoon of milk
- 1/2 cup of butter (1 stick)
Notes:
- Save a little bit of the sliced almonds for the top of the biscotti.
- The juice might not get incorporated properly and the texture will not be smooth.
Steps:
1. Sift together the baking powder and salt in the all-purpose flour. Mix well.
2. Add the cornstarch to the water and mix well.
3.Using an electric hand mixer, cream together the butter and sugar. Then, add the cornstarch mixture, milk, vanilla extract, and orange juice. Whisk again.
4. To the wet ingredient mixture, add the orange zest, all-purpose flour, sliced almonds, and cranberries. Mix well to form a dough.
5. Separate the dough into two pieces and form each piece into a log shape that is about 3 inches wide and 9 inches long.
6. Preheat the oven to 350°. Sprinkle the rest of the sliced almonds on top of the logs and slightly press them in.
7. Bake for about 15 minutes until the logs are brown at the top. It should not be cooked fully but it should have some cracks.
8. Let the logs cool for about 10 minutes. Cut the logs into thin biscottis using a pastry cutter. The slices should be about 3/8 of an inch.
9. Transfer the biscottis into a separate tray once it is cut. Then, let it bake for about 5-7 more minutes. Flip them over and let them cook again for 5-7 minutes. Let them cool and enjoy!
