Chef Jody Adams shares her recipe for these addictive Italian grissini breadsticks. Jody's version features fennel seeds and tangy, salty Parmesan cheese. Start one day ahead as the dough is best when allowed to rest in the refrigerator overnight. Impress dinner guests by serving a bundle in a simple water glass or a decorative vase.

SOURDOUGH BREADSTICKS
INGREDIENTS
160g of Discard of Levain
Water 30g – 35g
130g white flour
5g Sea salt
10g Olive Oil
25g of grated cheese
topping of your taste (fennel, flax, sesame seed etc.)
Butter olive oil for brushing
INSTRUCTIONS
Mix all ingredients, except oil or egg yolk and toppings, and knead until all flour is hydrated.
Transfer the dough onto a floured work surface and cut it into strips with a pizza cutter or a sharp knife.
Now you just must grab the strips at each end and stretch them out to the length of 35 cm and place them on a parchment paper.
Brush the strips with butter or olive oil and sprinkle some seed and/or flake salt or cheese and rosemary etc.
Preheat your oven to 180ºC. Bake for 20 minutes until golden brown and crispy. Let cool on wire rack.

CHEESY GLUTEN FREE BREADSTICKS | Easy Cheesy Garlic Breadsticks
These Cheesy Gluten Free Breadsticks are loaded with flavor! Garlic, butter and Italian herbs and lots of cheese are layered over an easy gluten free pizza crust made with Caputo Gluten Free Flour. After baking, cut them into breadstick shapes for a cheesy good appetizer that you’ll never know is gluten free.
Caputo Gluten Free Pizza Flour 2.2lb -
Pizzacraft 15 Square ThermaBond Baking/Pizza Stone -
Winco 16-Inch Aluminum Pizza Screen, 16 Inch -
Dough Ingredients:
1 Cup Caputo Fioreglut gluten free flour, plus extra for dusting surfaces
¾ tsp Salt
½ tsp Instant Yeast
½ Cup Warm Water (100ºF - 105ºF)
1 tsp Granulated Sugar
½ tsp Olive Oil
Topping Ingredients:
1 Tbs. Butter
1 tsp. Garlic Powder
1 ½ Cups Shredded Italian Blend Cheese
Dried Basil, Parsley, and Oregano to taste
Preheat the oven to the lowest temperature and turn it off as soon as it is preheated.
Make the Dough
1. Combine Caputo gluten free flour, yeast, sugar and salt in a large mixing bowl, whisking to combine.
2. Add the water and olive oil to the dry ingredients and mix with a sturdy spoon for about two minutes until the dough/batter is smooth.
3. Add the dough/batter to a large bowl that has been lightly greased with olive oil.
4. Coat the top of the pizza dough with olive oil.
5. Cover the bowl with its lid or plastic wrap and place in the warmed oven for 1-2 hours until the dough has doubled in size.
Baking the breadsticks
1. 30 minutes before baking, place a pizza stone in the oven on the middle shelf and preheat the oven to 500ºF
2. Place a sheet of parchment paper on a pizza screen or upside down baking sheet and dust lightly with gluten free flour.
3. Turn the dough onto the parchment paper.
4. Using lightly oiled, wet or floured hands, press the dough into a oval.
5. Once the oven is preheated use the pizza screen or baking sheet and slide the crust and parchment paper off the pan onto the pizza stone.
6. Bake the crust for 6-7 minutes.
7. While the crust parbakes, add the butter and garlic powder to a small bowl and melt in the microwave for about 30 seconds.
8. Remove the crust from the oven and brush it with the garlic butter
9. Top with shredded cheese and a sprinkling of basil, oregano and parsley to taste.
10. Return the dough to the oven and bake for an additional 6-7 minutes until the cheese is melted and bubbly.
11. Remove from the oven, cut into breadsticks and enjoy.
