How To make Olive Oil and Fennel Bread Sticks
3/4 c Warm water
3/4 c Warm beer
1 pt Dry yeast
3/4 c Olive oil( good quality! )
1 tb Fennel seeds
1 1/2 ts Salt
4 1/2 c Flour( approx )
Glaze: 1 Egg
1 tb Water
I love the taste of fennel and extra virgin olive oil. Dissolve yeast in warm water and warm beer for 10 minutes or until very foamy. Add olive oil, salt and fennel seeds. Mix in 3 1/2 cups flour and knead until smooth and elastic adding more flour as needed to prevent stickiness.Place dough in oiled bowl, cover and let rise double. Punch down dough and divide into 12 balls and divide each ball into 4 pieces. Roll each
piece into a long rope and place on greased baking sheets at least 1 inch apart. Brush with egg glaze.Bake immediately, 350 until golden about 30 minutes. Note: I also like to sprinkle on rosemary, anise or other seeds on the dough.Plus I make my bread sticks larger by dividing the 12 balls of dough in 2 or 3 pieces instead of 4. And I also like to brush on extra virgin olive oil instead of the egg wash over the breadsticks prior to baking them.then you have to turn them over during baking and brush more oil on them to brown the other side. I like the taste good olive oil gives! -----

Easy and tasty Breadstick Recipe
SOURDOUGH BREADSTICKS
INGREDIENTS
160g of Discard of Levain
Water 30g – 35g
130g white flour
5g Sea salt
10g Olive Oil
25g of grated cheese
topping of your taste (fennel, flax, sesame seed etc.)
Butter olive oil for brushing
INSTRUCTIONS
Mix all ingredients, except oil or egg yolk and toppings, and knead until all flour is hydrated.
Transfer the dough onto a floured work surface and cut it into strips with a pizza cutter or a sharp knife.
Now you just must grab the strips at each end and stretch them out to the length of 35 cm and place them on a parchment paper.
Brush the strips with butter or olive oil and sprinkle some seed and/or flake salt or cheese and rosemary etc.
Preheat your oven to 180ºC. Bake for 20 minutes until golden brown and crispy. Let cool on wire rack.

Bread Stick
Ingredients
Flour 500 gm
Yeast 5 gm
Black Paper 5 gm
Salt 12 gm
Zeera 8 gm
Olive Oil 50 gm
Water 200 ml
Egg 2 pieces
Method
Take a bowl; make dough of flour, yeast, black paper, salt, zeera, olive oil and egg in it. Then cover and leave dough for rest for 15 minutes. Now make half sticks of it using hands. Then leave it for rest. Again extend sticks properly to give the shape of bread sticks. At the end, apply egg on it and top it with sesame seeds, nigella sativa or paprika. Now bake it at 180°C for 15 minutes.

Ingredients:
2 handfuls cashews, soaked in boiling water for 15 mins
2 handfuls spinach/chard leaves
3-4 dill fronds
1-2 large fennel fronds
1 clove of garlic
1 spring onion
juice and zest from half a lemon
a good glug of extra virgin olive oil
2tbs nutritional yeast
1-2 cups cold water
salt and pepper
To decorate:
extra virgin olive oil
violas
marigold petals
fennel fronds
homemade or shop bought nut crumb/dukkah
Method:
- Place all the ingredients in a high speed blender and blitz to create a smooth pale green sauce, adding water as necessary
- Taste and adjust seasoning and sharpness so its flavour is balanced and moreish
- Pour into a pretty bowl and decorate with the flowers, crumbs and a drizzle of olive oil
- Serve with seasonal crudités, bread sticks or use as a sauce to dress salads, grains or pasta
