How To make Olive Oil and Fennel Bread Sticks
3/4 c Warm water
3/4 c Warm beer
1 pt Dry yeast
3/4 c Olive oil( good quality! )
1 tb Fennel seeds
1 1/2 ts Salt
4 1/2 c Flour( approx )
Glaze: 1 Egg
1 tb Water
I love the taste of fennel and extra virgin olive oil. Dissolve yeast in warm water and warm beer for 10 minutes or until very foamy. Add olive oil, salt and fennel seeds. Mix in 3 1/2 cups flour and knead until smooth and elastic adding more flour as needed to prevent stickiness.Place dough in oiled bowl, cover and let rise double. Punch down dough and divide into 12 balls and divide each ball into 4 pieces. Roll each
piece into a long rope and place on greased baking sheets at least 1 inch apart. Brush with egg glaze.Bake immediately, 350 until golden about 30 minutes. Note: I also like to sprinkle on rosemary, anise or other seeds on the dough.Plus I make my bread sticks larger by dividing the 12 balls of dough in 2 or 3 pieces instead of 4. And I also like to brush on extra virgin olive oil instead of the egg wash over the breadsticks prior to baking them.then you have to turn them over during baking and brush more oil on them to brown the other side. I like the taste good olive oil gives! -----

Crunchy Italian Breadsticks - Grissini - Quick and Easy
Crunchy Italian Breadsticks, also called Grissini, are on the menu at Deep South Texas. This homemade bread is quick and easy to make and will impress the family. A great addition for a holiday meal, or just a snack. I have made 4 types. One with toasted sesame seeds, one with poppy seeds, one with Everything Bagel seasoning, and one with Montreal Stake seasoning (spicy). They turned out great. Recipe ingredients below.
Italian Breadsticks or Grissini
Makes 20 breadsticks
2/3 cups plus 1 teaspoon room temperature water
2 tsp Instant yeast
2 cups bread flour (all purpose flour should work)
1 1/2 tsp salt
2 Tablespoons olive oil
optional extras
1 Tablespoon toasted sesame seeds
1 Tablespoon poppy seeds
1 Tablespoon Everything Bagel seasoning
1 Tablespoon Montreal Stake Seasoning
Bake at 400 F for 20 minutes, turning once

-8 grissini breadsticks
●8 very thin slices prosciutto
●2 teaspoons minced shallot
●1 teaspoon Dijon mustard
●1 tablespoon white balsamic vinegar
●1/4 teaspoon salt
●1/4 teaspoon freshly ground black pepper
●1/3 cup canola oil or olive oil
●5 ounces mesclun greens
●1/2 cup thinly sliced fennel bulb
●1/4 cup pine nuts, toasted

SOURDOUGH BREADSTICKS
INGREDIENTS
160g of Discard of Levain
Water 30g – 35g
130g white flour
5g Sea salt
10g Olive Oil
25g of grated cheese
topping of your taste (fennel, flax, sesame seed etc.)
Butter olive oil for brushing
INSTRUCTIONS
Mix all ingredients, except oil or egg yolk and toppings, and knead until all flour is hydrated.
Transfer the dough onto a floured work surface and cut it into strips with a pizza cutter or a sharp knife.
Now you just must grab the strips at each end and stretch them out to the length of 35 cm and place them on a parchment paper.
Brush the strips with butter or olive oil and sprinkle some seed and/or flake salt or cheese and rosemary etc.
Preheat your oven to 180ºC. Bake for 20 minutes until golden brown and crispy. Let cool on wire rack.

1 cup sunflower oil or replace with olive oil
1 cup flavoured aniseed water
2 tsp baking powder
1 tbsp salt
1 1/2 tbsp Aniseed
1 tbsp Nigella seeds
1 tbsp Fennell seeds

2 tbsp Dates moulases future with 1 tsp water
