Oatmeal Lace Cookie (gluten-free, no-sugar)
Yield: 16pcs
½ cup brown butter
¾ cup erythritol sugar / coconut sugar (highly recommended)
¼ cup quick-cooking oats
1 tsp vanilla extract
1 egg
1 tsp salt
1 tsp baking soda
2 tbsp coconut flour
1. Preheat oven to 350 degrees F.
2. Brown butter for 3-4 mins
3. In a bowl, add oats, sugar, egg, vanilla, salt, baking soda. Mix until well combined.
4. Gradually add brown butter
5. Stir in coconut flour
6. Use 1 tbsp measuring spoon to scoop cookie dough.
7. Leave at least 2 inches between each cookie to allow them to spread.
8. Bake for 6-8 mins
9. The cookies will come out soft after baking so allow the cookie to cool on cookie sheet before transferring to rack.

Oatmeal Lace Cookie Recipe - Crispy Crunchy Oatmeal Chocolate Sandwich Cookies!
Have you ever tried lacey cookies before? I've seen them at Costco and now Trader Joe's, and if you've never tried these cookies before, you're in for a delicious treat! They're crisp caramel and toffee flavored cookies sandwiched in between a layer of rich dark chocolate. It's a snap to whip up in a matter of minutes, and don't require much baking time at all. Perfect for a treat with coffee or tea!
Makes 14-16 individual cookies or 7-8 sandwich cookies.
3 tablespoons (24 g) all purpose flour
1/4 cup (25 g) old fashioned, rolled oats
1/4 teaspoon baking soda
1/8 teaspoon salt
3 tablespoons (40 g) unsalted butter
2 tablespoons (25 g) light brown sugar
2 tablespoons honey or agave nectar
1/2 teaspoon pure vanilla extract
3.5 oz. dark chocolate (preferably at least 65% cacao)
Preheat oven to 400 F (200 C). Prepare a large baking sheet pan with parchment paper or silicone mat. Set aside.
In a small food processor, combine flour, oats, baking soda, and salt. Pulse until oats are mostly chopped. A few medium sized, coarse pieces are okay. Set aside.
In a small saucepan, melt butter, sugar, and honey/agave over medium heat. When the mixture begins to come to a rolling boil, immediately stir in dry ingredients. Cook for 30 seconds to 1 min. Turn off heat and stir in vanilla. Allow to cool for 1-2 minutes. Using a teaspoon, spoon out batter leaving a couple inches of space in between for spreading. Bake for 5-7 minutes or until golden brown around the edges. They should have a thin, lace like appearance. Allow to cool completely on the pan placed over a wire rack before sandwiching between melted chocolate. Once cooled, use a thin spatula to separate from the pan, flip one cookie so the flat side is facing upward, spread a thin layer of melted chocolate over the surface, and sandwich with another similar sized cookie. Allow to cool in the fridge until set and firm. Enjoy! :)

1. Place 1 1/2 cups of whole raw almonds into a food processor and pulse them on high speed until they chop up into fine crumbs. Then set them aside.
2. In a medium saucepan add 1/2 cup unsalted butter, 3/4 cup brown sugar, and 1/4 cup honey. Stir using a metal whisk.
3. Once it comes to a boil, turn the heat off and remove the saucepan from the heat.
4. Then stir in 1/2 teaspoon vanilla extract and 3 tbsp all-purpose flour.
5. Now, use a spatula to mix in the finely chopped almonds. 
6. Then scoop out about 1/2 tablespoon-sized scoops of the cookie dough onto a baking sheet lined with a silicone mat. If you don’t have a silicone mat, parchment paper works too. But the mats will result in more even baking.
7. Make sure to place each scoop of the lace cookie dough at least 3 inches apart. They will spread a lot when they bake.
8. Now preheat your oven to 325 degrees Fahrenheit. Then take each piece of cookie batter and roll it out to a ball, and place it half onto the baking sheet.
9. Place each baking sheet in the center rack (one at a time). Then bake for 8 minutes making sure to turn once after 4 minutes.
10. While the cookies are looking, melt 1 1/2 cups of semisweet chocolate in a microwave-safe bowl until fully melted. Always be sure to do this in intervals with stirring in between to avoid scorching the chocolate.
11. Now take 1 Florentine cookie and gently spread a little bit of the melted chocolate on the back of it, then place a similar sized cookie on top. So you want the back of each cookie to sandwich the chocolate in between them.
12. Let the chocolate set for about 1-2 hours before serving.
