1 c Butterscotch Chips
- (Hershey's) 1/2 c Reese's Peanut Butter Chips
1 tb Shortening
-(do not use butter, - margarine or oil) 1 1/2 c Chow mein noodles
-- coarsely broken Line tray with wax paper. In medium microwave-safe bowl, place butterscotch chips, peanut butter chips and shortening. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted and mixture is smooth when stirred. Immediately add chow mein noodles; stir to coat. Drop mixture by heaping teaspoonfuls onto prepared tray or into paper candy cups; let stand until firm. If necessary, cover and refrigerate until firm. Store in tightly covered container in refrigerator. About 2 dozen candies. Variation: Chocolate Haystacks: Substitute 1 cup Hershey's Semi-Sweet Chocolate Chips or Hershey's Milk Chocolate Chips for butterscotch chips. Butterscotch Haystacks Recipe
In this video, Kevin is making Butterscotch Haystacks. This is a simple recipe takes very little time to prepare. Once your haystacks go into the refrigerator, they only take 10-15 minutes to harden. They need to be kept refrigerated until served. Store in the refrigerator in an airtight container.

10-ounce package (approx. 2 cups) Butterscotch Chips
1 cup Peanut Butter
1 cup Cocktail Salted Peanuts
10-ounce package (approx. 6 cups) Chow Mein Noodles
Melt butterscotch chips and peanut butter in the microwave stopping and stirring every 30 to 40 seconds until smooth. Add the peanuts and noodles and stir together. Place by spoonfuls onto a cookie sheet lined with waxed paper or greased. Let sit out until hardened before packing away in airtight containers.

No-bake butterscotch haystack cookies are delicious crunchy cookies with chow mein and salted peanuts folded in butterscotch chips and peanut butter mix and topped with holiday sprinkles for extra fun.
Prep time: 10 minutes
Cook time: 2 minutes
Servings: 16 cookies (medium sized)
Ingredients
▢2 cups chow mein noodles
▢1 cup butterscotch chips
▢½ cup peanut butter creamy
▢1 cup salted peanuts can use other nuts like cashews, silvered almonds, chopped walnuts
▢Sprinkles optional
Instructions
1. In a large bowl toss fried chow mein noodles and salted peanuts together. Set it aside.
2. Add butterscotch chips and creamy peanut butter in another bowl. Melt in microwave or double boiler until just melted. Do not over heat.
3. Whisk the mix until smooth and creamy.
4. Pour the mix over chow mein noodles peanuts mix.
5. Using silicon spatula stir with gentle hands to get a uniform coat on chow mein noodles. Make sure not to break the noodles too much.
6. Using a 2 tablespoon scoop, scoop cookies onto a parchment paper or wax paper lined on baking tray.
Note: if using ice cream scoop be careful not to break chow mein noodles too much. I prefer to use wide spoons to scoop the cookies to avoid breaking noodles. But I found using 2 spoons one large and one small spoon is the best way to scoop out cookies without breaking it so it retains ‘haystack’ shape.
7. Immediately add sprinkles on top.
8. Allow it to set until completely hardened. Let it sit at room temperature for about 3-6 hours or pop it in fridge for about 1 hour or until set.
9. Serve and enjoy!

Directions
1. In a large microwave safe bowl, add in 1 cup of butterscotch chips. Microwave the butterscotch chips in 15 second intervals, stirring the butterscotch chips each time after removing them from the microwave. Continue this process until the butterscotch chips are fully melted. If you do not have a microwave, feel free to use a double boiler to melt the butterscotch chips.
2. Add a 1/2 cup of creamy peanut butter. Feel free to substitute the creamy peanut butter for another type of nut butter if you prefer. Mix the creamy peanut butter into the melted butterscotch chips until it's fully combined.
3. Add two cups of chow mein noodles to the mixture and carefully fold the noodles in until they are fully coated. Feel free to add nuts, pretzels, or candy for extra flavor or a crunch.
4. Use a tablespoon to take a scoop of the mixture and place on a baking sheet lined with parchment paper. Don't worry about the appearance of these as they will not look neat and you really can't mess these up. Feel free to add extra candy on top as decoration. Refrigerate for about 15 minutes or until they have hardened.

Haystack cookies are perfect for holiday parties, potluck gatherings, not to mention they make precious (and budget-friendly) gifts. You can dress them up for literally any holiday, all you need are sprinkles!
So let’s kick this off with the basics: The ingredients. Here’s what you’ll need, butterscotch (or chocolate chips), peanut butter (not the healthy stuff), chow mien noodles, and miniature marshmallows.
Going into the recipe, here’s what you’ll want to keep in mind: When it comes to making the BEST #haystackcookies, the peanut butter, to chip, to salt ratio is absolutely everything.
WHAT YOU'LL NEED:
1 cup butterscotch chips
1/2 cup creamy peanut butter
1/8 teaspoon salt
1 (5 ounce) container chow mein noodles (about 2 cups)
1 cup miniature marshmallows
HOW TO MAKE HAYSTACK #COOKIES:
1. Ready your work surface with wax paper
2. Add peanut butter and butterscotch chips to the microwave and cook at 50% power, at 30-second intervals until melted. Some brands won’t melt as smoothly as others, so don’t panic if your chips don’t melt entirely.
3. Add the salt and vanilla and stir.
4. Add the chow mien noodles and marshmallows and fold to combine.
5. Transfer to a work surface and using two spoons and sprinkle (QUICK so they don't set up — only scoop 3-4 at a time), and allow to set up in the fridge.
