How To make Nancy's Apple Bread
1 cup butter or margarine
softened
1 cup sugar
1 teaspoon baking soda
1 tablespoon lemon juice
2 eggs
2 teaspoons vanilla
2 cups flour
1/4 teaspoon salt
1 1/2 cups apples, peeled :
coarsely chopped
CRUMB MIXTURE 1 teaspoon cinnamon
2 tablespoons sugar
2 tablespoons flour
2 tablespoons cold butter or margarine
Cream butter and sugar together. In a separate bowl, dissolve soda in lemon juice. Mix in eggs and vanilla. Beat butter mixture and egg mixture together. Add flour and salt. Do not over mix. Gently fold in apples. Mix crumb ingredients, cutting in butter to get a coarse crumb texture. Spoon 1/2 of batter into greased stoneware loaf pan. Sprinkle with 1/2 crumb mixture. Spoon in remaining batter and sprinkle with remaining crumb mixture. Press crumbs gently into surface of batter. Bake at 375 degrees for 1 hour 15 minutes or until a cake tester inserted in center comes out clean. Cool slightly in pan. Remove bread from pan

Nancy’s Apple Dapple Cake
3 cups self rising flour
1 cup chopped walnuts or pecans
1 cup vegetable oil
2 cups white sugar
3 eggs
2 tsp vanilla
3-5 cups chopped apples
Bake 350 degrees one hour
Sauce for top:
1 cup packed brown sugar
1/4 cup milk
3/4 cup butter
Bring sauce to boil and stir then remove from heat. Pour warm sauce over cake while cake still warm. Punch holes in cake before pouring sauce. Let cool completely.

Ingredients:
Bread Pudding:
•4 eggs
•1 cup Greek yogurt
•1 cup whole milk
•1 tablespoon vanilla extract
•½ teaspoon nutmeg
•2 teaspoons cinnamon
•½ cup + 2 tablespoons sugar
•4 cups (3-5) diced, peeled apples
•8 cups cubed, stale or dried out bread
Sauce:
•2 sticks unsalted butter
•1 cup packed brown sugar
•1 cup heavy cream
•1 tablespoon vanilla extract
Directions:
Bread Pudding:
•Lightly spray a casserole dish with cooking oil.
•In a large bowl, whisk together the eggs, Greek yogurt and whole milk.
•Whisk in the vanilla extract, the nutmeg, a teaspoon of cinnamon and a ½ cup of sugar.
•Add the apples and mix with your hands.
•Add the cubed bread and mix with your hands.
•Pour the contents of the bowl into the prepared casserole dish. Try to distribute the apples evenly throughout the soaked bread cubes in the dish.
•In a separate bowl, mix together 2 tablespoons of sugar with a teaspoon of cinnamon.
•Sprinkle the cinnamon and sugar mixture over the bread and apples in the casserole dish.
•Bake in a 350 degree oven for 45 minutes.
Sauce:
•Once the bread pudding is out of the oven, melt 2 sticks of unsalted butter in a sauce pan over low heat.
•Increase the heat to medium.
•Once melted, whisk in the packed brown sugar and heavy cream until the mixture is a single consistency.
•Bring the sauce mixture to a boil.
•Once the sauce is boiling, remove the heat, stir and whisk in the vanilla extract. Be careful! The vanilla extract may cause the sauce to rapidly bubble up.
•While the sauce is still hot, pour it over the bread pudding.
