Apple Pie Bread Pudding

Ingredients:
Bread Pudding:
•4 eggs
•1 cup Greek yogurt
•1 cup whole milk
•1 tablespoon vanilla extract
•½ teaspoon nutmeg
•2 teaspoons cinnamon
•½ cup + 2 tablespoons sugar
•4 cups (3-5) diced, peeled apples
•8 cups cubed, stale or dried out bread
Sauce:
•2 sticks unsalted butter
•1 cup packed brown sugar
•1 cup heavy cream
•1 tablespoon vanilla extract
Directions:
Bread Pudding:
•Lightly spray a casserole dish with cooking oil.
•In a large bowl, whisk together the eggs, Greek yogurt and whole milk.
•Whisk in the vanilla extract, the nutmeg, a teaspoon of cinnamon and a ½ cup of sugar.
•Add the apples and mix with your hands.
•Add the cubed bread and mix with your hands.
•Pour the contents of the bowl into the prepared casserole dish. Try to distribute the apples evenly throughout the soaked bread cubes in the dish.
•In a separate bowl, mix together 2 tablespoons of sugar with a teaspoon of cinnamon.
•Sprinkle the cinnamon and sugar mixture over the bread and apples in the casserole dish.
•Bake in a 350 degree oven for 45 minutes.
Sauce:
•Once the bread pudding is out of the oven, melt 2 sticks of unsalted butter in a sauce pan over low heat.
•Increase the heat to medium.
•Once melted, whisk in the packed brown sugar and heavy cream until the mixture is a single consistency.
•Bring the sauce mixture to a boil.
•Once the sauce is boiling, remove the heat, stir and whisk in the vanilla extract. Be careful! The vanilla extract may cause the sauce to rapidly bubble up.
•While the sauce is still hot, pour it over the bread pudding.
Nancy’s Apple Dapple Cake
3 cups self rising flour
1 cup chopped walnuts or pecans
1 cup vegetable oil
2 cups white sugar
3 eggs
2 tsp vanilla
3-5 cups chopped apples
Bake 350 degrees one hour
Sauce for top:
1 cup packed brown sugar
1/4 cup milk
3/4 cup butter
Bring sauce to boil and stir then remove from heat. Pour warm sauce over cake while cake still warm. Punch holes in cake before pouring sauce. Let cool completely.

~ Apple Cinnamon Bread ~
2 cups all-purpose flour
1 1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 sticks unsalted butter (soften)
8 oz. cream cheese (soften)
4 whole eggs
1 tsp. vanilla extract
1 1/3 white sugar
For Cinnamon mixture:
1 1/2 cinnamon powder
1/2 tsp. nutmeg
1/2 cup brown sugar
2 tbsp. flour
2 Granny Smith apples
Direction:
-Preheat the oven to 350 degrees and grease loaf pans. Set aside.
-Peel and dice the apples, mix well with brown sugar, 2 tbsp. all-purpose flour, nutmeg, and cinnamon powder. Set aside.
-In a large mixing bowl, sift all dry ingredients together, all-purpose flour, salt, baking soda, and baking powder. Set aside.
-Moving on making the cream. Beat the softened unsalted butter, cream cheese, and vanilla extract with an electric mixer until smooth. Add eggs one at a time and mix well after each addition.
-Slowly mix the flour mixture into the cream mixture until thoroughly incorporated.
-Divide the cinnamon mixture into half and fold it in the first half into the batter.
- Pour the batter into a prepared loaf pans, smooth evenly.
- Top the remaining cinnamon mixture into each loaf pans, spread evenly.
- Bake in a preheated oven for 45 minutes or until the toothpick inserted in the center comes out clean.
- Let it cool down completely.
- Slice and serve. You can enjoy it with coffee in the morning or tea in the afternoon!
