Ingredients:
-Olper’s Cream 200ml (room temperature)
-Yakhni (Chicken stock) 1 Cup
-Dijon mustard 2 tbs
-Namak (Salt) ½ tsp or to taste
-Kali mirch (Black pepper) crushed ½ tsp or to taste
-Cayenne powder 1 tsp
-Dried thyme ½ tsp
-Boneless chicken thigh pieces 500g (6 pieces)
-Dijon mustard as required
-Kali mirch (Black pepper) crushed to taste
-Namak (Salt) to taste
-Olive oil 2 tbs
-Olive oil 2 tbs
-Makhan (Butter) 2-3 tbs
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) chopped 1 tbs
-Olper’s milk 3-4 tbs
-Fresh parsley chopped 1-2 tbs
Directions:
-In a jug add cream,chicken stock,dijon mustard,salt,black pepper crushed,cayenne pepper,dried thyme,whisk well & set aside.
-On a cutting board,place chicken thigh pieces & apply dijon mustard with the help of brush on both sides.
-Sprinkle black pepper crushed,salt on both sides and marinate for 30-45 minutes.
-On a cast iron,add cooking oil & cook marinated chicken on low flame from both sides until tender & golden brown (5-6 minutes each side) & set aside.
-On a same cast iron pan,add cooking oil,butter & let it melt.
-Add onion,garlic & sauté for 2-3 minutes.
-Add cream & stock mixture,mix well and cook on low flame until sauce is thick (3-4 minutes).
-If required,add milk and mix well.
-Now add fried chicken pieces and fresh parsley,cover & cook on low flame for 2 minutes.
-Garnish with fresh parsley & serve with coriander rice!

-Kali mirch crushed aur namak ko dono sides per chirak dein aur 30-45 minutes kliya marinate ker lein.
-Cast iron pan mein cooking oil dal dein aur marinated chicken ko halki ancch per dono sides sa tender & golden brown ho janay tak paka lein (5-6 minutes each side) & side per rakh dein.
-Us he cast iron pan mein cooking oil aur makhan dal ker melt ker lein.
-Pyaz aur lehsan dal ker 2-3 minutes kliya sauté ker lein.
-Cream & yakhni mixture dal ker ache tarhan mix karein aur halki ancch per sauce garha ho janay tak paka lein (3-4 minutes).
-Agar zaroorat ho tou mazed doodh dal ker ache tarhan mix ker lein.
-Ab fried chicken pieces aur fresh parsley dal ker dhak dein aur halki ancch per 2 minutes kliya paka lein.
-Fresh parleys sa garnish ker lein aur coriander rice ka saath serve karein.

Chicken Thighs with Creamy Mustard Sauce

Ingredients
8 medium bone-in, skin-on chicken thighs (2 1/4 pounds)
Kosher salt and freshly ground black pepper
Good olive oil
2 cups halved and thinly sliced yellow onions (2 onions)
2 tablespoons dry white wine
8 ounces creme fraiche
1 tablespoon good Dijon mustard
1 teaspoon whole-grain mustard
1 tablespoon chopped fresh parsley
Directions
Place the chicken thighs on a cutting board, skin side up, and pat them dry with paper towels. Sprinkle the chicken with 1 1/2 teaspoons salt and 3/4 teaspoon pepper. Turn them over and sprinkle them with one more teaspoon of salt.
Heat 1 tablespoon olive oil in a large (11 to 12-inch) cast-iron skillet over medium heat. When the oil is hot, place the chicken in the pan in one layer, skin side down. Cook over medium heat for 15 minutes without moving, until the skin is golden brown. (If the skin gets too dark, turn the heat to medium low.) Turn the chicken pieces with tongs, add the onions to the pan, including under the chicken, and cook over medium heat for 15 minutes, stirring the onions occasionally, until the thighs are cooked to 155 to 160 degrees and the onions are browned. Transfer the chicken (not the onions) to a plate and allow to rest uncovered while you make the sauce. If the onions aren't browned, cook them for another minute.
Add the wine, creme fraiche, Dijon mustard, whole-grain mustard, and 1 teaspoon salt to the skillet and stir over medium heat for one minute. Return the chicken, skin side up, and the juices to the skillet, sprinkle with parsley, and serve hot.

*RECIPE* (2 servings)
INGREDIENTS:
450g/1 lb chicken breast (boneless, skinless)
---Marinade---
1/2 tsp black pepper powder & salt
3 tbsp yogurt
---Sauce---
2 tbsp olive oil
2 large/6 small shallots
2 tbsp butter
1 tbsp dried thyme/5 sprigs fresh thyme
1/2 lemon/lime
1/2 cup water
1/3 cup heavy cream (or fresh cream)
1 tsp sugar
1/2 tsp black pepper powder
1-2 tbsp dijon mustard
1/2 tsp fennel powder (optional)
Salt as needed
PROCESS:
1. Slice 450g/1 lb boneless chicken breasts into even thin fillets. This will help them cook evenly and stay tender
2. Marinade the chicken in 1/2 tsp salt, 1/2 tsp black pepper and 3 tbsp yogurt for 15 mins or longer
3. Mince 2 large/6 small shallots. Shallots pair well with mustard but can be substituted with 1 small onion and 1 clove of garlic
4. Heat olive oil on medium flame and fry the chicken breast fillets for 2 minutes per side. This should be enough to cook it through as thin fillets cook very fast. Cooking them for too long will make them dry and rubbery
5. Remove the cooked chicken fillets and set it aside. If you wish to cut them into pieces, wait 5 minutes before doing so. They need time to rest to stay moist
6. In the same pan, reduce flame to low and melt 2 tbsp butter
7. Sauté the minced shallots until translucent
8. Add the thyme and mix well
9. Add the juice of 1/2 lemon, 1/2 cup water and 1 tsp sugar
10. Simmer for 5 minutes or until the sauce has reduced by less than half
11. Add 1-2 tbsp dijon mustard. Add 1 tbsp first, you can taste and add more if needed
12. Add 1/3 cup heavy/fresh cream and mix well
13. Add 1/2 tsp black pepper powder, 1/2 tsp fennel powder and salt as needed
14. Switch off the flame, add cooked chicken breasts and let it soak for 5 mins. This will warm the chicken and allow it to absorb flavor
15. Serve this will steamed broccoli, buttered toast or herb rice

SUBSTITUTES:
• No thyme?
Substitute with oregano or mixed herbs
• No yogurt?
Substitute with mayonnaise
• No shallots?
Substitute with 1 small onion + 1 garlic clove
• No fennel powder?
You can skip it. But would recommend adding if available
• No heavy cream?
Fresh cream or Creme fraiche can be used

TIPS:
• Don’t crowd the chicken breast while cooking or they will release too much water and prevent browning
• Mustard has salt so don’t add salt beforehand. You can always add salt at the end
• Taste and adjust seasonings in the sauce towards the end

1/2 Cup (125ml) - Wine or Chicken or Vegetable Stock (Alcohol Substitute)
1 1/2 Tbsp (30g) - Dijon Mustard
1 Tbsp (20g) - Wholegrain Mustard
1 Cup (250ml) - Thickened Cream
5g (0.2oz) - Fresh Thyme, Picked & Chopped
5g (0.2oz) - Fresh Parsley, Roughly Chopped
3g (0.1oz) - Fresh Tarragon, Picked
Seasoning To Taste
Mashed Potato -
1kg (2.2lbs) - High Starch Potatoes, Peeled and halved
3/4 Cup (180ml) - Full Fat Milk
50g (1.7oz) - Unsalted Butter, Cubed

Recipe Notes -
If using dried herbs instead of fresh use 1 tsp of both parsley and tyhme and 1/2 tsp tarragon.
This recipe can be made with chicken thigh instead of chicken breast. Sear the thighs for 6 minutes on each side then continue the recipe as per normal.

About Chicken Curry
Chicken curry or curry chicken is a dish originating from the Indian subcontinent. It is common in the Indian subcontinent, Southeast Asia, Great Britain, and the Caribbean. A typical curry from the Indian subcontinent consists of chicken stewed in an onion- and tomato-based sauce, flavoured with ginger, garlic, tomato puree, chilli peppers and a variety of spices, often including turmeric, cumin, coriander, cinnamon, and cardamom. Outside of South Asia, chicken curry is often made with a pre-made spice mixture known as curry powder.
Indian cuisine has a large amount of regional variation, with many variations on the basic chicken curry recipe. Indian chicken curry typically starts with whole spices, heated in oil. A sauce is then made with onions, ginger, garlic, tomatoes, and powdered spices. Bone-in pieces of chicken are then added to the sauce and simmered until cooked through.[1] In south India, coconut and curry leaves are also common ingredients.[2] Chicken curry is usually garnished with coriander leaves, and served with rice or roti. In south India, chicken curry may be thickened using coconut milk.
