BAKED HONEY MUSTARD CHICKEN
The classic combination of honey and mustard smothered all over tender chicken breasts and baked to a succulent perfection. A wonderful throw-together baked chicken dinner that’s really easy to make and it’s healthy!

INGREDIENTS:
4 (4 ounces each) boneless, skinless chicken breasts
1 teaspoon (or to taste) chicken seasoning blend
1-1/2 tablespoons olive oil, divided
1/4 cup honey
1 tablespoon dijon mustard
1 tablespoon yellow mustard
1 tablespoon wholegrain mustard
1/2 teaspoon white vinegar
1/8 teaspoon paprika
4 sprigs fresh rosemary, optional but recommended
DIRECTIONS:
Preheat oven to 375°F.
Lightly grease a 9x13 baking dish with cooking spray and set aside.
Heat 1 tablespoon olive oil in a skillet.
Season chicken breasts all over with the chicken seasoning blend and add chicken breasts to the skillet; cook for 2 minutes on each side, or until browned.
In the meantime, prepare the honey mustard sauce.
Combine 1/2 tablespoon olive oil, honey, mustards, white vinegar, and paprika in a small mixing bowl; whisk until well combined.
Transfer chicken breasts from skillet to previously prepared baking dish.
Pour prepared honey mustard sauce over the chicken breasts, turning chicken over so to cover each chicken breast entirely.
Lay sprigs of rosemary between chicken breasts.
Cover with foil and bake for 20 minutes.
Remove cover and continue to bake for 15 minutes more, or until chicken is cooked through. Cooking time will vary depending on the size/thickness of the chicken.
Remove from oven and let stand 5 minutes.
Serve.

Oven Baked Honey Mustard Chicken Thighs
Today I have for you another chicken recipe and these Oven Baked Honey Mustard Chicken Thighs are mighty delicious. Uses very few ingredients but packs a lot of flavours. You can tweak it according to your taste but honestly, I don't think it's necessary maybe if you need some heat the cayenne pepper or some chilli flakes works out perfect too.

Baked Honey Mustard Chicken
This baked chicken breast recipe for Honey Mustard Chicken makes an easy one pan meal. It features tender glazed chicken breasts with mozzarella cheese over sautéed red onions.

Ingredients
4 chicken breasts, boneless and skinless
1 medium red onion, sliced thin
1 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 tsp garlic powder
8 oz fresh mozzarella cheese, sliced
1/4 cup honey
4 tbsp grain mustard
1/4 cup chopped parsley
Instructions
Preheat oven to 400°F. In a small bowl mix together the honey and grain mustard. Reserve half in separate bowl. Set both aside.
Place thinly sliced red onion in a rectangle 9x12 casserole dish that has been sprayed with cooking spray or olive oil. Add the chicken breasts on top of the onions.
Baste chicken with half of the honey mustard glaze.
Sprinkle the chicken with kosher salt, black pepper and garlic powder.
Add 2-3 slices of fresh Mozzarella cheese on top of each chicken breast.
Bake for 30 minutes, depending on the thickness of your chicken breasts. (See Note 1)
Allow to rest 5 minutes before slicing or serving. When serving, top each chicken breast with sautéed onion slices and fresh chopped parsley. Drizzle remaining honey mustard glaze on top of each chicken breast. Serve on its own, over steamed rice, pasta of choice, or roasted potatoes.
Note
1. If chicken breasts are too thick, slice in half horizontally and pound between sheets of plastic wrap for even thickness. For best results, use an instant read thermometer, the chicken is cooked when it reaches internal temperature of 165°F.
