Grilling Fresh Moose Tenderloin with Randy Newberg

How To Cook MOOSE | Slow Cooker Moose Recipe
Here's a simple and super delicious recipe for slow cooker braised moose in tomato sauce. This moose recipe can go with pasta, rice or just some fresh crusty bread. If you don't have moose meat (LOL), you can substitute with beef, lamb or chicken....
**** Tip: Marinade any kind of game meat at least 12-24 hours in red wine or vinegar before cooking to reduce that gamey taste.

Wild Flavors: Episode 2 - Moose Steaks with Homemade Sauces
Welcome to Wild Flavors! Presented by Brenda Weatherby, the cooking show dedicated to bringing you the most delicious ways to prepare wild game.
In this episode Brenda prepares moose steaks with three delicious steak sauces. This is sure to be a dinner favorite and upgrade your already delicious wild game steaks. You can find the full recipes below, bon appétit!
Parmesan Mustard Steak Sauce
Ingredients:
A good cut of steak about 1 inch thick
1 Tbsp olive oil
Kosher salt and freshly ground pepper to taste
For the Creamy Parmesan Mustard Sauce
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
1 Tbsp Dijon mustard
Kosher salt and freshly ground pepper to taste
Directions:
1. Heat a large heavy skillet, such as cast iron, over high heat. Add 1 tablespoon olive oil. Season the steak generously with salt and pepper. When the oil is hot, sear the steak for 3 minutes on each side, until a nice crust has formed. Let meat rest.
2. For sauce, combine the cream, Parmesan, mustard and salt and pepper in a small saucepan. Heat over medium heat, whisking frequently for about 5 minutes until thickened.
Serve the filets with the sauce drizzled over, sliced if desired, and the rest of the sauce passed on the side.
Blueberry Game Sauce
Ingredients:
1 jar of blueberry preserves
1/2 cup soy sauce
1/2 tsp cayenne pepper (or adjust depending on your liking of spice)
30-40 sage leaves chopped
1 Tbsp sugar or honey or maple syrup
Directions:
1. Mix all ingredients in a pot
2. Simmer all for about 10-12 minutes in sauce pan and spoon over your favorite wild game. This recipe makes a lot so you could half it.
Gorgonzola White Wine Sauce
Ingredients:
2 Tbsp butter
2 scallions or leeks white part (cut into rings)
1 clove garlic (peeled and finely chopped)
1/4 Cup walnut (coarsely chopped)
1/4 Cup Dry white wine
1/4 Cup vegetable stock
3 ounces gorgonzola
1/4 Cup cream
Directions:
1. Heat the butter, add the spring onions, garlic and walnuts and sauté briefly.
2. Deglaze the pan with the wine and simmer for 2-3 minutes. Add the stock and bring to the boil.
3. Reduces the heat, add the Gorgonzola and cream and stir until it reaches a creamy consistency.
4. Seasons to taste with salt and ground black pepper.
