✅Ingredients
Chocolate Crust:
• 1 cup crushed chocolate graham crackers
• 5 tablespoons salted butter, melted
Fudgy Cake Layer:
• 8 ounces semi-sweet chocolate chips
• ¾ cup salted butter
• 1 cup granulated sugar
• ¾ cup unsweetened cocoa powder
• 3 tablespoons all-purpose flour
• 1 teaspoon instant espresso powder (optional)
• 4 large eggs
• 1 ½ teaspoons vanilla extract
Chocolate Streusel:
• ½ cup brown sugar
• ¼ cup all-purpose flour
• ¼ cup unsweetened cocoa powder
• ¼ cup salted butter, cold
• 2 chocolate graham crackers, roughly chopped
Ganache:
• 3 ounces semi-sweet chocolate chips
• 3 ounces heavy cream (about ⅓ cup)
✅Instructions
1️⃣ Preheat oven to 375 degrees. Make the crust by tossing together crushed graham crackers and melted butter in a small mixing bowl. Press into the bottom of a standard pie plate (not deep dish). Bake in the preheated oven for 7 minutes.
2️⃣ Meanwhile, make the fudgy cake layer. Place chocolate chips and butter into a microwave safe mixing bowl. Microwave for 30 seconds at a time, stirring in between, until everything is melted and smooth.
3️⃣ Pour in sugar, cocoa powder, flour, espresso powder (if using), eggs, and vanilla extract. Use a hand mixer to beat together until just combined. Do not over mix. Scrape the sides and bottom of the bowl to ensure everything is mixed in. Pour into the baked chocolate graham cracker crust.
4️⃣ In a medium bowl, prepare the streusel topping by stirring together brown sugar, flour, and cocoa powder. Use a pastry blender (or two knives) to cut the butter into the flour mixture until it resembles small pebbles. Add in roughly chopped graham crackers and toss to combine.
5️⃣ Sprinkle streusel evenly over the top of the fudgy cake layer. Return pie to the oven and bake 25 to 30 minutes at 375 degrees Fahrenheit.
6️⃣ While pie is baking, make the ganache by placing chocolate chips into a mixing bowl. Heat heavy cream in the microwave until simmering, about 45 seconds. Pour hot cream over chocolate chips. Let stand 2 minutes, then stir until smooth.
7️⃣ Drizzle ganache over the fully baked pie. Let cool for 15 minutes before serving, or cool completely.
Recipe Notes:
To reheat before serving, simply heat the pie in a 300 degree oven for 8 to 10 minutes.

Idiot Proof Mississippi Mud Pie
Hey what's going on everyone? Hope your weekend is going well. If it's not, maybe making this crazy chocolatey pie will perk you up! So today I wanted to bake something decadent and landed on Mississippi mud pie. Now there are numerous different ways to make Mississippi mud pie, and they're all great, but I particularly enjoy the way I make it. Starting off with an oreo cookie crumble pie crust, then a brownie/cake layer, topped with chocolate custard, and then a final layer of whipped cream. It is one hell of a decadent treat, and if you've never made this before you definitely should give it a try...unless you hate chocolate and then I guess don't make this.

Betty's Mississippi Mud Cake -- CHOCOLATE!
Betty demonstrates how to make Mississippi Mud Cake. This is a recipe that is well-known in the South. It is delicious and also great for potluck dinners.
Mississippi Mud Cake
(Note: Some of the ingredients will be divided and be used in two parts of the cake.)
2 cups sugar
2/3 cup cocoa powder
4 sticks butter
4 eggs
2 teaspoons vanilla extract
1 ½ cups self-rising flour
1 1/3 cup sweetened, flaked coconut
1 ½ cup chopped pecans
one 7-ounce jar marshmallow crème
½ cup milk
one 1-pound box confectioner's sugar (same as powdered sugar or icing sugar)
Place 2 cups sugar, 1/3 cup cocoa powder, and 3 sticks butter in a large mixing bowl. Beat well. Add 4 eggs, one at a time, beating well after each addition. Add 1 teaspoon vanilla and 1 ½ cups self-rising flour, mixing well. Stir in 1 1/3 cup flaked coconut and 1 ½ cups chopped pecans. Pour mixture into a greased and floured 9-inch by 13-inch by 2-inch baking pan, which can double as a serving dish. Bake at 350 degrees (F) for 40 minutes, or until a toothpick, inserted in the center comes out clean. Remove from oven and spread a 7-ounce jar of marshmallow crème over hot cake. Let cool in pan. In a large mixing bowl, combine remaining 1 stick butter, ½ cup milk, 1 pound confectioner's sugar, remaining 1 teaspoon vanilla, and the remaining 1/3 cup cocoa powder. Beat until smooth. Spread on cooled cake. This frosting sets slowly, but can be sped up by placing frosted cake in refrigerator. When frosting is set, cut the Mississippi Mud Cake into squares and serve on dessert plates. YUM! I hope you enjoy this rich, chocolate cake! --Betty :)
