Ingredients
1/2 Cup of plain flour
1/2 Cup of cocoa powder
3/4 Cup of sugar
1/3-1/2 Cup of firmly packed brown sugar
1/4 Teaspoon of salt
1/2 Cup of melted butter
2 Eggs
1 Teaspoon of vanilla extract

Mississippi Mud Pie

INGREDIENTS
Crust
2 cups finely ground chocolate graham crackers about 18 full-size graham crackers or 2/3 of a 14.4 oz box
2 tbsp finely ground pecans
2 1/2 tbsp sugar
6 tbsp butter melted
Fudge Brownie Layer
6 tbsp butter
4 oz semi-sweet baker's chocolate
7 tbsp sugar
6 tbsp packed brown sugar
5 tbsp cocoa powder
3/4 tsp salt
1/4 cup hot water
1 tsp vanilla extract
2 tbsp all-purpose flour
5 eggs
Chocolate Pudding
4 egg yolks beaten
2/3 cup sugar
4 tsp cornstarch
7 tbsp cocoa powder
1 1/2 cups heavy whipping cream
1 tbsp butter
Whipped Cream Topping
1 1/2 cups heavy whipping cream
1/4 cup powdered sugar
semi-sweet chocolate for garnish shavings
INSTRUCTIONS
Crust
Preheat the oven to 325º. Prepare a pie pan by using the butter wrapper to butter the bottom and side.
In a medium bowl, combine ground graham crackers, pecans, sugar, and butter.
Press mixture into the pie pan. Press mixture on the bottom as well as the sides of the pan. Bake for 10 minutes.
Fudge Brownie Layer
Increase the oven temperature to 350º.
Put butter, semi-sweet chocolate, sugars, cocoa powder, and salt in a medium size pan. Heat over medium heat until butter and chocolate are melted, stirring constantly and combining the ingredients until smooth.
Remove from heat and immediately add hot water, vanilla, and flour. Combine until smooth.
Add eggs one at a time, stirring well after each one.
Pour batter over the graham cracker crust. Bake for 35 minutes.
Let cool completely.
Chocolate Pudding
Place egg yolks in a small heat proof bowl. Set aside.
In a medium size pan, whisk together sugar, cornstarch, cocoa powder, milk, and heavy cream. Bring to a low boil, stirring constantly for 2 minutes.
Pour approximately 1 cup of the hot milk mixture into the egg yolks, whisking constantly until well combined. Add the egg mixture to the rest of the milk mixture. Bring to a low boil and stir for 2 minutes more.
Remove from heat, add butter, and stir until the butter is melted.
Pour into a medium sized bowl, place plastic wrap on top with the plastic wrap resting directly on the pudding. Refrigerate until set.
Pour pudding over the pie, spreading close to the crust edge but not necessarily touching the crust.
Whipped Cream Topping
Pour whipping cream into a medium sized mixing bowl. Mix on high speed until stiff peaks begin to form. Gradually add powdered sugar.
Spread whipped cream on top of the pie.
Using a vegetable peeler, peel off chocolate shavings from the semi-sweet chocolate. If necessary, microwave the chocolate for 10 or 15 seconds to soften it before making the shavings.

How to Make Mississippi Mud Cake
This cake is a family favorite, and has been for many years! It’s a very simple cake to make with easy to find ingredients. Don’t let the simplicity fool you though, this cake is rich and delicious, and looks as decadent as it tastes!
I have said many times that I am not a professional, and these videos are just my kids and I having fun. Well this one proved it. The audio cut out while filming and we didn’t realize it until we were looking at the final videos. My son said he could fix it. We did a voice over at the end and had to do some extensive editing on the final few videos. I think overall he did a great job!

Jane’s Mississippi Mud Cake
2 1/2 sticks of Butter
2 C sugar
1 1/2 C all-purpose flour
1/2 C + 1/3 C Cocoa
1 C chopped nuts, optional
4 eggs, lightly beaten
1 tsp. Vanilla
1 pound powdered sugar
1/4 C milk
13 oz. Jar Marshmallow Crème or a small bag of miniature marshmallows
Preheat oven to 350. Spray a 9x13 baking dish, set aside.
Melt 2 sticks of butter in a saucepan. Remove from heat.
Blend in 1/2 C cocoa
Add sugar, eggs, flour, and vanilla- beating well
Stir in nuts
Pour into prepared baking dish
Bake at 350 for 25-30 minutes or until a toothpick inserted comes out clean
Cover with marshmallow crème (or miniature marshmallows)
Put back in the oven until crème (or marshmallows) are partially melted, remove from oven
Blend 1/2 sticks of melted butter and 1/3 C cocoa
Beat in powdered sugar and milk til smooth (add additional milk if needed)
Drizzle over marshmallows
Cut and serve when cooled
Mississippi Mud Cake
Cake ingredients:
2 cups sugar
1/3 cup cocoa powder
1 cup softened butter/margarine
4 eggs
1 tsp vanilla
1 1/2 cup flour
1 tsp baking powder
1 1/3 cup coconut flakes
1 1/2 cups pecans or chocolate chips
12 oz. marshmallow cream/fluff
Icing ingredients:
3 3/4 Cups powdered sugar
1/3 cup cocoa powder
1/cup softened butter/margarine
1 tsp vanilla
2 tablespoons of milk
In mixing bowl, cream butter, cocoa powder, and sugar. Add eggs and vanilla. In separate bowl, stir together flour, baking powder, coconut, and nuts/chocolate chips. Fold into chocolate mixture. Grease 9x13 pan. Pour batter in pan. Bake at 350° for 35-40 minutes until toothpick inserted comes out clean. Immediately top with marshmallow cream. Allowing heat to help melt the marshmallow to spread. Cool completely!
Icing:
Beat powdered sugar, room temperature butter, cocoa powder, and vanilla. Beat in milk to make a spreadable consistency. Dollop over marshmallow and spread. This is a sweet decadent treat and pieces can be cut small.
Mississippi Mud Cake - Best Cake Ever
I have been making this cake since 1979 and it has always turned out wonderfully. If you like chocolate cake and marshmallows then you will love this cake. It is easy to make and great to have as a special dessert. Hope you enjoy it as much as my family has through the years.
Mississippi Mud Cake-Best Chocolate Cake
1 cup butter
4 eggs
1 cup flaked coconut
2 cups sugar
1 1/2 cups sifted flour
1/3 cup cocoa
1 tsp vanilla
1 cup chopped nuts
Mix together and bake at 350 degrees for 40 minutes. Top with 13 ounce jar of marshmellow cream while the cake is still hot from the oven.
Frosting
1/2 cup butter
6 Tablespoons Pet milk
1/2 cup cocoa
1 box powdered sugar
1 cup choped nuts
1 cup cocconut flakes
1 teaspoon vanilla
Mix well and add to top of marshmellow cream.
