How to make Japanese style Miso Noodles Stir Fry Recipe
LEARN HOW TO MAKE A VEGAN MISO FLAVOURED NOODLE STIR FRY
LAY HO MA!! You know I love noodles! You can enjoy them in soup and stir fry. Plus, those squiggly guys take on the flavour of whatever you throw at them - simply amazing! Join me in this episode and learn how to make a delicious vegan miso udon noodles stir fry! Let's begin.
Ingredients:
5-6 small bean curd sticks
1 shallot
5 broccolini
1 stick green onion
1 bundle udon noodles
2 tbsp red or white miso paste
1/2 tbsp soy sauce
2 tbsp black garlic/burnt garlic oil (
1 tbsp cane sugar
drizzle of olive oil
1 cup bean sprouts
1 tbsp white sesame seeds
Directions:
1. Bring a pot of water to boil for the noodles. Add the bean curd sticks into the water
2. Slice the shallot and chop the broccolini into bite sized pieces
3. Chop the green onion, but keep the white and green parts separate
4. When the water comes to a boil, let it cook further for another 5min. Then, add the udon noodles. Cook the noodles for half the time to package instructions (in this case 4min)
5. Save 1/2 cup of the cooking water. Strain out the rest of the water and set the noodles aside
6. Make the sauce by mixing together the cooking water, miso paste, soy sauce, black garlic oil, and cane sugar
7. Heat up a sauté pan on medium heat. Drizzle some olive oil
8. Sauté the white part of the green onion and shallot for a couple of minutes. Add in the broccolini and sauté for another couple of minutes
9. Add the noodles, bean curd sticks, and the bean sprouts
10. Add the sauce and stir for a few minutes until the noodles have absorbed the sauce
11. Plate and garnish with green onion and white sesame seeds

★Niku Miso (Meaty Miso)
[Ingredients for 2 - 3 people]
*All measurements are in US standard format
0.45 lb Ground pork
(approx. 200g)
Miso sauce:
To taste Cooking oil
1/4 cup Red miso
1 tsp Soy sauce
3 tbsp Sugar
2 tbsp Sake (for cooking)
1 tsp Grated garlic
1 tsp Grated ginger
To taste Black pepper & Red chili pepper
When you cook the pork with the miso sauce, add
1/2 cup Water
You can eat with
- Soft tofu (green onion as garnish)
- Lettuce (as lettuce wraps)
- Noodles (Add some sesame oil to mix with the noodle)
- Rice etc.
★Miso chicken steaks
[Ingredients for 2 people] *All measurements are in US standard format
2 Large chicken thigh pieces (or 4 small chicken thigh pieces)
Miso marinade:
4tbsp Miso
2tbsp Sake (for cooking)
2tbsp Mirin
2tbsp Honey or Sugar
1tsp Grated garlic
1tsp Grated ginger
When you cook, add
1tbsp Sesame oil

250 grams of dried spaghetti
1 tbsp cooking oil (for pasta water)
1 tbsp salt (for pasta water)
1 stick or 8 tbsp unsalted butter
350 grams sliced cremini mushrooms (brown or baby bella)
6 cloves garlic (minced)
2 tbsp white miso paste (shiro miso paste)
1/2 cup whipping cream
1.5 pasta water
Pinch of salt and pepper
Furikake seasoning for garnish
