How To make Vegetable Saute with Miso Sauce Over Linguine
2 tb Safflower oil
2 Garlic cloves; minced
1/4 c Sliced shittake mushrooms
1/2 c Zucchini, sliced
1/2 c Eggplant, sliced
1/2 c Yellow pepper, sliced
8 Scallions; finely chopped
1/4 c Miso
1 c Vegetable stock
4 tb Fresh chopped parsley
1 lb Cooked linguine
In a large saucepan, heat oil over medium heat. Add veggies and garlic and saute for about 3 minutes. Transfer to bowl. Add miso. Slowly add stock while stirring well. Add parsley, veggies and pasta. I finally found the perfect miso sauce for pasta or rice cakes. I have tried so many miso sauce variations and they resulted in a salty mix I just could not get into. This one changed my mind and thankfully now I have a use for all the miso I have stocked up.
Miso Tahini Sauce
2 T Miso
2 T Soy Sauce
1 1/2 T Tahini
1 T Dark Brown Sugar
1 t black vinegar
1 t sriracha
Sauté vegetables (I had broccoli and mushrooms)
Saute protein (I used pork steak cubed and double sautéed)

Ribbon Noodles:
Garlic Chili Oil Noodles:
4 cloves of minced garlic
thumb size knob of ginger, minced
½ a shallot, minced.
2 tbsp of soy sauce
1 tbsp of black vinegar
1 tsp of sugar
½ tsp of salt
korean chili flakes or Gochugaru
¼ cup of avocado oil
Ruffled wheat noodles
shredded cucumbers
sesame seeds
Miso Carbonara:
2 eggs
1 tbsp of yellow miso
½ cup grated pecorino
½ tsp of black pepper
bacon
garlic cloves
salt and cook spaghetti until just al dente.
½ cup of the pasta water
pinch of black pepper
Broccoli Beef Stir-Fry
¼ cup soy sauce
2 tbsp oyster sauce
1 tbsp brown sugar
2 tsp sesame oil
2 tsp rice vinegar
½ tsp black pepper
3 cloves garlic
1 tsp grated ginger
¾ lb of flap meat
1 tbsp cornstarch
red onion
broccolini or baby broccoli
rice noodles or thai noodle
¼ cup broth

How to make Japanese style Miso Noodles Stir Fry Recipe
LEARN HOW TO MAKE A VEGAN MISO FLAVOURED NOODLE STIR FRY
LAY HO MA!! You know I love noodles! You can enjoy them in soup and stir fry. Plus, those squiggly guys take on the flavour of whatever you throw at them - simply amazing! Join me in this episode and learn how to make a delicious vegan miso udon noodles stir fry! Let's begin.
Ingredients:
5-6 small bean curd sticks
1 shallot
5 broccolini
1 stick green onion
1 bundle udon noodles
2 tbsp red or white miso paste
1/2 tbsp soy sauce
2 tbsp black garlic/burnt garlic oil (
1 tbsp cane sugar
drizzle of olive oil
1 cup bean sprouts
1 tbsp white sesame seeds
Directions:
1. Bring a pot of water to boil for the noodles. Add the bean curd sticks into the water
2. Slice the shallot and chop the broccolini into bite sized pieces
3. Chop the green onion, but keep the white and green parts separate
4. When the water comes to a boil, let it cook further for another 5min. Then, add the udon noodles. Cook the noodles for half the time to package instructions (in this case 4min)
5. Save 1/2 cup of the cooking water. Strain out the rest of the water and set the noodles aside
6. Make the sauce by mixing together the cooking water, miso paste, soy sauce, black garlic oil, and cane sugar
7. Heat up a sauté pan on medium heat. Drizzle some olive oil
8. Sauté the white part of the green onion and shallot for a couple of minutes. Add in the broccolini and sauté for another couple of minutes
9. Add the noodles, bean curd sticks, and the bean sprouts
10. Add the sauce and stir for a few minutes until the noodles have absorbed the sauce
11. Plate and garnish with green onion and white sesame seeds
