How To make Mexican Fiesta Tart
1/2 CORNMEAL PAStrY dough
1 Egg white, lightly beaten
2 c Shredded Monterey Jack
-cheese with jalapeno Pepper (8 ounces) 2 c Shredded sharp Cheddar
-cheese (8 ounces) 2 lg Tomatoes (1 1/4 pounds)
-cored, seeded, Cut into 3/4-inch cubes (3 -cups) 1/3 c Sliced green onions
2 md Zucchini (3/4 pound), thinly
-sliced 1/2 lg Red or green bell pepper, in
-thin strips 1/3 c Sliced pitted ripe olives
1/4 c Chopped fresh cilantro
-(coriander) Preheat oven to 400 F. On lightly floured surface roll dough to a 25-inch round. Transfer to a 12-inch tart pan with removable bottom. Trim edges; prick bottom with tines of fork. Lane pastry shell with pastry weights, dried beans, or raw rice. Bake 15 minutes. Remove foil with weights. Bake 5 to 6 minutes longer or just until pastry starts to turn golden. Brush with egg white and bake 1 minute longer. Cool completely on wire rack. In large bowl, toss together cheeses. Sprinkle half the cheese mixture over bottom of cooled tart shell. Top with a layer of tomatoes, then half the onions, the zucchini, pepper, olives, remaining onions then remaining cheese. Bake 20 minutes or until heated through. Cool 15 minutes on wire rack before

Cold Butter cubes - 75 grams (1/3 cup)
Sugar - 1 & 1/2 Tsp
Salt - 1/2 Tsp (As per taste)
Lime juice - few drops
Cold Water - 3 Tbsp
2) Mexican Filler Ingredients :
Boiled Kidney Beans - 1/2 cup
Boiled Sweet Corn - 1/4 cup
Chopped Green Capsicums - 1/4 Cup
Chopped Red Capsicums - 1/4 Cup
Chopped Tomato - 1/4 Cup
Black olives - 2 Tbsp
Pickled Jalapeno - 1 Tbsp
Roasted Cumin Powder - 1/2 Tsp
Black pepper powder - 1/4 Tsp
Mixed Herbs - 1 Tsp
Red Chilli Flakes - 1/4 Tsp
Salt - 1/2 Tsp (as per taste)
Lime Juice - 1Tbsp
Tomato Ketchup - As per tate

Recipe: #Modify Mexican Fiesta Fries
Ingredients:
1 bag (650g) McCain Superfries Straight Cut
Fresh Corn on the Cob
Bell Peppers
Cotija cheese
kosher salt
chipotle powder
Cilantro Lime Butter (
Instructions:
1. Preheat oven to 450 degrees. Place McCain® Superfries on a baking sheet. Bake for 15-20 minutes until they are golden brown. Toss halfway through cooking.
2. While the fires are cooking grill Corn & Peppers on the BBQ
3. Remove Corn & Peppers from the grill. Shuck corn & dice peppers into thin strips
4. Remove fries from the oven and toss in 1tbs cilantro lime butter
- 1⁄2 cup unsalted butter, softened
- 1 lime zested and juiced
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon finely ground black pepper
- 1⁄4 cup chopped fresh cilantro
3. Top fries with grilled corn, peppers, Cotija cheese, fresh cilantro.
