Mediterranean cuisine is a diverse and flavorful culinary tradition stemming from the countries surrounding the Mediterranean Sea, including Greece, Italy, Spain, France, Turkey, Egypt, Lebanon, and others. It's known for its emphasis on fresh, wholesome ingredients and a balance of flavors.
???? Ingredients:
For the fish
4 salmon fillets
Season the salmon fillets to taste with: oregano, garlic powder, olive oil, lemon juice, salt and black pepper to taste
For the rice
olive oil
1 small onion chopped
2 crushed garlic cloves
1 and 1/2 cup of rice
3 cups of seasoned vegetable broth
1 juice and zest of 1 lemon
Parsley and dill to taste
Once cooked, add lemon juice and zest and dried herbs to taste
Lemon slices and basil leaves if desired to decorate
For the salad
1 cup cherry tomatoes cut in half
1/2 cup olives, cut in half
1/2 diced cucumber
About 150 grams of feta cheese
Basil leaves to taste
Approx. 250 grams of green leaves mix
Olive oil, salt and black pepper to taste

Stuffed Chicken With Spinach and Cheese
If your chicken breasts are in need of a serious dinnertime upgrade, look no further than this Stuffed Chicken! It's stuffed with full-flavored ingredients like spinach, cheese, sun-dried tomatoes, shallots, and garlic and seasoned with the perfect spice blend!

But, the best part? It's is SO MUCH EASIER than you think it is! There's no need to round up the toothpicks. You don't need them! This chicken looks absolutely irresistible with a colorful interior of cheesy goodness spilling out.
Cutting a pocket in the chicken breast might seem intimidating for some of you out there, but all you need is a good sharp knife and to pay attention to where the blade is going. You'll want to avoid cutting all way to the other side of the chicken breast, so slow, careful knife movement is key!
After that, it's just a matter of whipping up the stuffing (no pre-cooking required), seasoning, and baking! I'll include the written recipe below. INGREDIENTS:
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/4 cup chopped sun-dried tomatoes
1/2 shallot, minced
2 large cloves garlic, minced
1 cup freshly grated Fontina or Mozzarella cheese
2 pounds (4-6) chicken breast halves, patted dry with a paper towel
1 3/4 teaspoon Kosher salt
1 teaspoon black pepper
1 teaspoon paprika
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
1-2 tablespoons avocado, canola, or olive oil
INSTRUCTIONS:
Preheat the oven to 375°F and have ready a sheet pan, preferably lined with aluminum foil.
Place the thawed spinach in a colander and press out all of the excess moisture using the back of a wooden spoon or a potato masher. Transfer the spinach to a mixing bowl along with the sun-dried tomatoes, shallot, garlic, and cheese. Set aside until ready to use.
Using a good, sharp knife, cut a horizontal pocket in the thicker part of the chicken breast, stopping about a 1/2 from the edge so the breast stays intact. Transfer the chicken to the sheet pan.
In a small bowl, combine salt, pepper, paprika, garlic powder, and onion powder. Drizzle the chicken with oil, sprinkle evenly with the seasoning mix, and rub all over to adhere. Lastly, add about 2-3 tablespoons of the filling to the pocket of each breast.
Bake for 20-25 minutes, until the chicken is cooked through and juices run clear when pierced with a knife.

Straight from my Egyptian kitchen, hawawshi recipe is made with crispy pita pockets that are stuffed with a tantalizing meat mixture, seasoned with onions, hot peppers and fresh herbs. FULL RECIPE ????

???? 1 large yellow onion quartered
???? 2 garlic cloves
???? 1 green bell pepper cored and cut into large chunks
???? 1 jalapeno halved and seeded (leave some of the seed if you like heat)
???? ½ ounce fresh parsley stems trimmed (cut most of the stem but leave some for extra flavor)
???? 2 lbs lean ground beef
???? 3 tbsp tomato paste
???? Kosher salt
???? Extra virgin olive oil
???? 6 loaves of pita bread you need the kind with pockets
FOR THE HAWAWSHI SEASONING MIXTURE

???? 1 tsp allspice
???? 1 tsp paprika

???? ¾ tsp cardamom

Mediterranean chicken tenderloins is a simple, delicious, and healthy dish. Made with a wonderful combination of homemade Mediterranean spices, chicken, and almond flour, the taste is out of this world. I always serve mine up with a Greek salad and some tzatziki sauce. Ingredients:
1 lb or 1/2 kilo of chicken tenderloins
1/2 cup of almonds
1/2 cup of powdered Parmesan cheese
For the Mediterranean seasoning:
1 tbsp of dried rosemary
1 tsp of cumin
1 tsp of coriander
1 tsp of oregano
1/2 tsp of cinnamon
salt and pepper to taste
2 beaten eggs
Method:
Preheat your air fryer to 350 degrees F or 177 C.
Note: If you don't have an air fryer, you can use an oven.
Place almonds in a food processor, pulse until it becomes flour like, and place it in a zip lock bag.
Add in the Parmesan and the Mediterranean spice mixture.
Seal the bag and shake until well combined.
Dredge the chicken in the egg mixture and set aside on a plate.
In batches, place the chicken into the bag, seal, and shake until completely coated.
Set them onto an oiled wire rack with a baking pan underneath to serve as a drip tray.
Bake for 15 minutes.
Serve and enjoy your Mediterranean chicken tenderloins.
