One of my favorites is this smooth and creamy Chocolate Marshmallow Fudge, also known as Fantasy Fudge. This fudge is different than old fashioned chocolate fudge which is made from a mixture of sugar, butter, and cream that is cooked to the soft ball stage, cooled, and then beaten until creamy. This Chocolate Marshmallow Fudge simply involves boiling evaporated milk, butter, sugar, and marshmallow cream for just five minutes (a candy thermometer is not absolutely necessary) and then stirring in some dark chocolate, vanilla, and chopped nuts. So easy and so good. Perfect for gift giving.

Here is how I make my favorite holiday treat. I used to make this every year but this is the first time in many years. This fudge is very easy to make and always turns out amazing.
Old Fashioned Fudge, traditional recipe/no marshmallows
Old fashioned fudge recipe without sweetened condensed milk or marshmallows. With basic ingredients and technique you can make fudge the way your grandma's grandma made it! Recipes for vanilla and chocolate fudge

INGREDIENTS
2 cups sugar
1 cup whole milk
½ cup evaporated milk
½ teaspoon salt
3 tablespoons unsalted butter
2 teaspoons vanilla
INSTRUCTIONS
Line a baking sheet with parchment paper and set aside. In a medium saucepan combine sugar, whole milk, evaporated milk and salt. Heat over medium and stir constantly until sugar dissolves and mixture comes to a boil.
Reduce heat to medium low and cook until mixture reaches 240F/116C on a candy thermometer. Stir frequently to prevent burning. If you do not have a candy thermometer, drop some of the mixture into cold water. If a soft ball forms, it is ready. If you would like a firmer fudge, cook a few minutes longer. In total it should take about 30 minutes. Remove from heat.
Add butter but do not stir. Allow the mixture to cool in the pot until the butter is melted and the bottom of the pot feels very warm to touch but not hot.
Add vanilla and beat vigorously with a spoon until the fudge begins to thicken and lose its gloss. Quickly spread onto the parchment lined baking sheet to form a slab of your desired thickness. Cool for 2-3 hours before cutting into squares. Fudge tastes best a day or two later.

Fudge with Marshmallow Fluff!!
Making Fudge with my Grandson
Fudge
5 cups sugar
1 teaspoon salt
10 oz evaporated milk
1 stick butter or margarine
16 oz marshmallow fluff
24 oz chocolate chip or 2 – 12 oz packages
1 ½ teaspoon vanilla
1 cup chopped nuts optional
Stir the sugar, salt, milk, marshmallow cream and butter over med heat until it boils continue stirring and boil for 3.5 to 5 mins to soft boil stage (236 degrees) remove from stove add choc, vanilla and nuts. Stir until choc is melted. Pour into large, buttered dish, allow to cool then cut into squares.

3/4 cup or Butter
2 1/2 cups of Sugar
2/3 cup of Full Fat Condensed Milk (do not use sweetened)
12 oz of Chocolate Semi-Sweet (not the cheap stuff)
7 oz of Marshmallow cream
1 tsp Vanilla Extract
Mix it, Get it to the right temp, and let it sit. Enjoy!
