How To make Marinated Vegetables
2 c Fresh Broccoli
3/4 c Carrots, cut diagonally
1 c Celery, cut diagonally
1/2 c Red pepper, sliced
1/4 c Pitted olives*
1 cn 14-oz, artichoke hearts, in
-water 1/4 c Fat-free Italian Dressing
1/8 ts Red pepper
Steam broccoli and carrots till crisp; rinse in cold water to stop the cooking process. Toss broccoli, carrots and remaining veggies in a large bowl. Add dressing and red pepper and toss again. Chill a few hours; serve on a large platter.

Grilled Marinated Vegetables
8 C Vegetables - cut in uniform chunks
(zucchini, yellow squash, bell peppers, onion, mushrooms, tomatoes, etc)
1/3 C Olive Oil
1/4 C Fresh Lemon Juice
1/4 C Water
3 Tbsp Dijon Mustard (I like to use 2 Dijon + 1 Whole Grain)
2 Tbsp Honey
3 Cloves Garlic - minced
1 Tbsp Parsley - finely chopped
1 tsp Oregano
1 tsp Basil
1/2 tsp Salt
1/2 tsp Pepper
Cut vegetables in uniform chunks.
In small bowl or jar mix all ingredients. Place vegetables in a large
zip lock bag and pour marinade over vegetables.
Marinate at least 4 hours or as long as you can.
Soak wooden skewers for at least 30 minutes so they don't burn on the grill. No need to worry if using metal skewers.
Place vegetables on skewers and grill brushing with marinade, turning occasionally until vegetables are tender.

One of my favorite things to do on Sundays is meal prepping! This week I'm going to be prepping 3 different kinds of pickled radishes and 3 of my go-to side dishes. ????this way we got delicious dishes ready to go throughout the week. All 6 recipes are vegetarian-friendly!
We’ve got Jammy Eggs, Spicy Soy Radish, Mala Radish, Sweet & Sour Radish, Sweet & Sour Cucumber, and last but not least, Taiwanese Pickled Cabbage.
All of these may seem intimidating at first, but don’t worry, I’ve got tons of secret tips and tricks that will make this process super fun and easy!
I also did a detailed blog post below on exact measurements. The only recipe not featured will be my sweet and sour cucumber, which will be in my cookbook out in 2024!
