How To make Marinated Mushroom Salad
1 lb Fresh mushrooms
1 c White vinegar
2 c Water
1/2 c Sliced carrots
1/2 c Diced celery
1/2 c Green peppers strips
1/2 c Red pepper strips
1/3 c Olive oil
1 ts Oregano leaves, crushed
3/4 ts Salt
1/4 ts Garlic powder
1/4 ts Black pepper
Rinse, pat dry and slice mushrooms. In a medium saucepan combine vinegar and mushrooms; bring to a boil. Reduce heat and simmer, covered for 2 mins. Drain mushrooms; set aside to cool. In a small saucepan bring water to boil. Add carrots & celery; return to boil. Reduce heat and simmer covered for 3 mins. Add red, green peppers; cover and simmer for 3 mins or until tender. Drain and set aside to cool. In medium bowl mix olive oil, oregano & salt, black pepper; let stand 10 mins. Stir in mishrooms, carrots, and other vegetables. Mix well. Cover and refrigerate at least 2 hrs. before serving.

How To Make Marinated Mushrooms
INGREDIENTS:
1 pound small button or Bella mushrooms - cleaned
1 small jar rinsed pimento peppers
3/4 cup jarred drained pearl onions
2-3 tbsp. chopped fresh parsley
Dressing - OR can use favorite Italian, Greek or Vinagrette Dressing
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar / red wine vinegar
1/4 cup finely diced red onions
3-4 cloves minced or sliced garlic
1 tsp. dijon mustard
2 tsp. brown sugar
1/2 tsp. dried oregano
1 tsp. whole black pepper corns
1/4 tsp. crushed red pepper flakes - optional
1 bay leaf
salt and pepper to taste
*Mix above ingredients and whisk well to combine
Clean mushrooms and place in salted boiling water. Cook for 3-4 minutes
until tender. Drain and cool to room temp.
In bowl mix cooled mushrooms, dressing, chopped parsley, drained pimentos
and pearl onions. Gently mix.
Place in lidded container and refrigerate for 8 hours or up to 3-5 days.
Serve at room temperature.
Enjoy.

Little mushrooms are marinated in a zesty mixture. They're great for buffet style gatherings. They keep well for a long time in the fridge, or you may can them in mason jars and store in cupboard.
Ingredients:
Mushroom 150 g
Salt
Lime juice ¼ ts
Garlic chopped 1 ts
Crushed pepper 1 ts
Onion chopped 1 n
Basle leaf 15 g
Olive oil 1tb
Red wine vinegar ½ cup
Bell pepper (red) 1 n
Worcestershire 1tb
Directions:
Heat water in a pan add mushrooms, salt, squeeze the lime juice, once come to boil and drain it off.
Take a bowl add chopped garlic, crushed pepper, onion chopped, salt, crush it and Worcestershire sauce, Basle leaf, olive oil, bell pepper, red wine vinegar and add boiled mushrooms, mix it well and transfer to another bowl and rest for over night, at last add Parmesan cheese powder.
