I always boil a lot more beets so that I have a supply of boiled beets in the refrigerator and do not spend a lot of time preparing salads! This salad is very tasty and healthy!

Ingredients:
~ 500g of beets
3 eggs
1 blue onion
½ tsp salt, 1 tbsp sugar
3 tbsp apple cider vinegar
100ml boiling water
Herring fillet ~200g
Cilantro ~25-30g
Salt, Black pepper
Vegetable oil 2-3 tbsp.

Haring-bietensalade
RECEPT
(voor 2-3 personen)
4 Hollandse nieuwe haringen
500 gram voorgekookte bietjes
350 gram vastkokende aardappels
10 radijsjes
6 augurken (of meer naar smaak)
2 stengels bosui
Dille
Eetlepel kappertjes (optioneel, wel lekker)
Mayonaise
Citroen
Peper en zout
Lekker korenwijntje voor tijdens het koken
Schil de aardappels en snij in stukken. Kook 20 minuten.
Snij bieten, augurken, radijsjes, haringen, bosui en dille. Voeg samen in een grote kom. Voeg naar smaak peper en zout en kappertjes toe.
Giet de aardappels af wanneer ze gaar zijn en voeg ze toe.
Meng een paar eetlepels mayonaise met het sap van een halve citroen. Sprenkel over de salade.
Serveer met een snee lekker brood. En drink er een lekker glaasje witte wijn bij.
