How To make Marinated Chicken Breasts with Mozzarella
1 6 oz pkg long grain and wild rice pilaf mix
1/4 c green onions
thinly sliced
1/2 c water
1 c broccoli florets
2 tsp olive oil
4 marinated chicken breast halves
1 med tomato :
halved, thinly slice
2 slices part-skim mozzarella cheese -- halved
Prepare rice pilaf according to package directions, adding green onion the last 5 minutes of cooking. Meanwhile, in a saucepan bring the 1/2 cup water to boiling and add broccoli florets. Cook, covered, for 3 minutes or till crisp-tender; drain and set aside.
In a large, cast-iron skillet heat oil and cook chicken breasts over medium heat for 8-10 minutes or till no longer pink, turning once. Overlap the halved tomato slices on top of tomato slices and cover each with a half-slice of mozzarella.
Broil the chicken breasts 3-4 inches from the heat for 1 minute or till cheese is melted and bubbly. Serve on hot rice pilaf.

Ingredients:
Chicken
2 chicken breasts
¾ tsp salt
1 tsp ground coriander
¾ tsp cumin
½ tsp red chili
¾ tsp garam masala
1 tsp garlic paste
1 tsp ginger paste
2 tbsp plain yogurt
1 tsp lime juice
2 tbsp mustard oil
1 tbsp butter
1 tsp lime juice
1 tbsp fresh coriander
Dipping Sauce
½ cup yogurt
8 mint leaves
½ tsp roasted cumin
1 tbsp sliced cucumber
1 tbsp fresh coriander
Instructions:
1. Place the chicken breasts in a bowl
2. Coat it with salt to taste, ground coriander, roasted cumin, red chili, garam masala, garlic paste, ginger paste, plain yogurt, lime juice, and mustard oil
3. Marinate the chicken for a minimum of 2 hours
4. Drizzle cooking oil in a hot pan
5. Place chicken and cook for 7 minutes on low to medium heat
6. Flip the chicken and cook for another 6 minutes
7. Add butter, lime juice and fresh coriander
8. Remove the chicken breasts from heat and let it rest for 2 minutes before cutting to serve
9. Prepare dipping sauce by mixing yogurt with finely chopped mint leaves and coriander, roasted cumin, and thinly sliced cucumbers
10. Ready to enjoy!

One of my new favourite pasta recipes, so simple, delicious and a perfect way to satisfy your creamy pasta cravings while on a weight loss journey!
Chicken marinade:
• Chicken breast cut in halves (roughly 300g raw weight)
• 1 tbsp garlic powder
• 1 tbsp Italian herbs
• 1 tbsp paprika
• 1 tsp onion powder
• tsp salt & pepper
• 1-2 tsp olive oil
Mix well
Cook for 5 mins on each side! Medium heat
Pasta:
• 120g uncooked pasta (roughly 240g cooked weight)
• 1 tsp salt
Creamy sauce:
• 200ml low fat milk
• 100g light cream cheese (i use lightest Philadelphia)
• 20g parmesan or shredded mozzarella
• 1 tsp Italian herbs
• 1/2 cup pasta water
Once added to the pan, bring to a light boil then lower the heat and add the cooked pasta and chicken
• Garnish with parsley & parmesan
This recipe makes 2 servings!
