How To make Maple Nut Rugelach
Dough: 4 oz Cream cheese softened
1/3 c Butter, unsalted, room temp
1/4 c Sugar
2 tb Maple syrup
1/4 ts Salt
1 Egg yolk
1 1/2 c Flour
Filling: 1 c Fine ground walnuts
1/3 c Sugar
2 tb Maple syrup
1/8 ts Cinnamon
1 Egg white
1 ts Water
1 ts Sugar
Beat first 6 ingredients in bowl until smooth.Beat in flour to blend. Shape into ball, wrap in wax paper and chill 2 hours until firm. Prepare filling: stir together the first 4 ingredients. Divide dough in half. Roll each half on a floured surface 1/8 inch thick.Cut dough into 10 inch circle. Spread circle with filling.Cut circle into 16 pie shaped wedges.Roll up with wide edge, jelly roll fashion. Place point side down on baking sheet.Repeat procedure with remaining dough. Beat egg with water and brush over cookies. Sprinkle with sugar. Bake in a 350 oven 15 to 20 minutes or lightly browned. Remove to racks to
cool. Store airtight for up to 2 days. Almonds or pecans may be substitiuted for walnuts. -----

►1 cup (16 Tbsp) unsalted butter, melted (not hot)
►1 cup (8oz) warm milk (2% or whole milk)
►4 cups (500 grams) all-purpose flour, measured correctly*
►3/4 Tbsp active dry yeast
Ingredients for Rugelach Filling/ Topping:
►10 oz apricot preserves
►1 cup Fisher walnuts**
►3/4 cup dried cranberries/ craisins, dried cherries, currants, or golden raisins
►2 Tbsp granulated sugar
►1 tsp ground cinnamon
►Powdered sugar to generously dust cookies

I have been vegan for a while now and I have been super conflicted with my channel not being in alignment with my life and my beliefs
I am transitioning my channel/blog to align with my beliefs, I have been veg for 8+ years and have been in severe conflict here on my channel and when I owned my bakery by promoting the exploited animal industry, so I finally got off the fence and decided to stop being a hypocrite and follow my heart and soul passion.
I understand not everyone cares to be open to this kind of baking
(although I have been making some of my BEST recipes more recently!)
So I hope and wish that folks will be open minded and give me the same understanding for following my heart.
This has not been the case 100% so far, as I have sadly been met with anger and hatred
However others have been showing tremendous support and encouragement. I hope you will at least give it a chance. :)
I will not eliminate my old recipes and will still help you all with baking of any kind just like always!

These pistachio cookies are your classic vanilla cookies loaded with lots of pistachios and a hint of rose extract for that Middle-Eastern flavor. These have crisp edges with toasted pistachios and soft chewy centers.

Ingredients
▢¾ cup (170 g) Butter unsalted, room temperature
▢½ cup (100 g) Sugar fine grain
▢1 Egg large
▢1 Egg yolk
▢2 cups (250 g) All-purpose flour
▢¼ tsp Salt
▢¼ tsp Vanilla extract or rose extract
▢1 cup (120 g) Pistachio (6 oz) divided
