How To make Madras Meat Curry
1 1/2 lb Beef round steak
2 tb Vegetable oil
1 lg Onion, finely sliced
4 Whole cloves
4 Green cardamom pods, bruised
3 Green chiles, seeded, finely
-chopped 2 Dry red chiles, seeded,
-crushed 1 Inch piece fresh gingerroot,
-grated 2 Garlic cloves, crushed
2 ts Ground coriander
2 ts Ground turmeric
1/4 c Water
1/4 c Tamarind nectar, see note
-below Salt to taste Lettuce leaves to garnish Cut beef into 1-ich cubes. Heat oil in a large heavy saucepan, add beef and cook until browned all over. Remove with a slotted spoon and set aside. Add onion, cloves and cardamom to pan; cook, stirring, about 8 minutes, until onion is soft and golden brown. Stir in chiles, gingerroot, garlice, corinder and turmeric; cook 2 minutes. Return beef to pan, add water and cover. Simmer 1 hour. Stir in tamarind nectar and salt; simmer another 20 to 30 minutes, until beef is tender. Serve, garnished with lettuce leaves. Serves 4. Note: Tamarind nectar: Soak a walnut-sized piece of tamarind paste in one cup boiling water about 20 minutes, then squeeze in cheesecloth to extract liquid; discard pulp. 3/4 Tsp Garam Masala

3/4 Cup Tin Tomatos
200 Mls Coconut milk
Salt to taste

Easy Beef Madras Curry
Learn how to make this delicious and extremely tender beef madras curry. This curry recipe is super simple to put together and all the ingredients are easily accessible and cheap. The best part about this recipe is that there's a bit of downtime so you can go on by your day whilst the curry cooks in the background. Traditionally this curry is known to be hot (spicy) but I have mellowed the recipe to make it suitable for all taste buds.
Beef madras curry originated in south India from the city of Madras which is now known as Chennai. It's a popular recipe across the world and each nation has its own twist and technique.

Mouth-Watering Slow Cooked Beef Madras: A Curry Lover's Dream
Melt-in-the-mouth beef, slow-cooked in a rich, spicy sauce. The heat cooks out a little in this recipe, so it’s more of a warming heat, rather than a hard-hitting raw heat.
I love the texture of the sauce in this recipe. It's thick and sumptuous, and of course it's rich and flavourful too. Spicy-but-not-too-spicy. That beautiful texture comes from the blending of the onions, garlic and ginger. It's such a great way to start a curry sauce as it means no 'bits' in the sauce, which some people don't like.

Beef Madras Recipes in English:
Ingredients:
1kg Beef (with bones)
1/4 cup Ghee
1 cup Coconut cream
3-4 Cinnamon sticks
7-8 Cloves
2 tsp Lemon juice
1 tsp Ginger paste
1 tsp Garlic paste
1 cup Onion (chopped)
1 tsp Red chili powder
Salt to taste
2 tbsp Coriander seeds
1 tbsp Cumin seeds
1 tsp Turmeric powder
1 tsp Black peppercorn
7-8 Red chilies (dried)
Green coriander for garnish
Instructions:
In a grinder add coriander seeds, cumin seeds, red chilies, black peppercorn, turmeric, grind them well and make a powder.
In a pot boil water, add beef, cinnamon sticks, cloves and let it cook until meat gets tender. Remove the scum from it, your stock is ready, keep it aside.
In a separate pan heat oil, add onion and cook until translucent, then add ginger garlic paste and beef in it and cook.
Add 1 ½ tablespoon of prepared masala powder, red chili powder, salt, beef stock and cook for 2 to 3 minutes.
Then add lemon juice, coconut cream, mix it well and cook for 4 to 5 minutes or until you reach the desired consistency.
Your beef madras is ready. Garnish with coriander leaves and serve hot with boiled rice.
Preparation time: 20 minutes
Cooking time: 60 minutes
Serving: 3-4
