This simple mac n cheese is fast and really tasty. We are using onions, garlic, oregano, blue cheese, parmesan and of course cream. No flour in sauce which makes it so easy to make. This works well with any pasta, penne, spaghetti, fusilli, today we are using macaroni. Its cheap its fast and it taste great. you can use any type of blue you like, Roquefort, Danablu, Gorgonzola Blue Stilton - As part of the HOW TO COOK GREAT NETWORK -

Making your own cheese sauce doesn’t need to be so scary. As long as you follow a few simple tips, you will have a creamy sauce that will keep everyone coming back for more.
My husband is the resident cheese sauce maker, so one evening I was able to capture his cheese sauce making process. I wanted you to be able to SEE what it looked like, so that you have a good idea of what to look for when you make your own. This process involves lots of stirring and a bit of patience. And if you are like my husband you might include a pint of beer to enjoy while you are doing all of the stirring.
You may notice that my husband never measures anything. Remember? When I asked how much milk he was adding he said, “Enough.” The whole time he was adding milk he was waiting for the perfect consistency. When he got there, he knew it. When he was adding cheese, he was looking for a fantastic cheesy taste. He added cheese until it tasted right. Making cheese sauce really couldn’t be simpler and with practice, yours will be amazing too!

Pasta with Broccoli & Blue Cheese
Surprisingly Cheese goes really well with Blue Cheese and this quick and easy dish from The Hairy Bikers (Si King & Dave Myers) show us this dish that is full of flavour
Ingredients - Serves 4
2 tbsp Olive Oil
1 Shallot, finely chopped
1 Broccoli, cut into florets
2 Garlic Cloves, finely chopped
1/2 tsp Chilli Flakes
400g Penne Pasta
100g Blue Cheese, crumbled
Lemon Zest
Salt & Pepper
Instructions
1. Heat the Olive Oil in a Saute Pan
2. Add the Shallot and Broccoli Florets and cook until slightly browned stiring regularly
3. Add the Garlic and Chilli Flakes and cook for another 2 Minutes
4. Season with Salt & Pepper
5. Add 100ml Water, cover and steam until the Broccoli is just tender
6. Cook the Pasta in plenty of salted water (follow the packet instructions)
7. Reserve some of the Pasta Water
8. Add the Pasta to the Saute Pan
9. Add the crumbled Blue Cheese and a splash of water until the Cheese has melted
10. Add some of the reserved pasta water to make a cheesy sauce
11. Serve with sprinkled Lemon Zest and Chilli Flakes
12. Enjoy
