If you like your wings saucy you’re going to love these grilled buffalo chicken wings. Coated in a thick layer of spicy, creamy buffalo sauce and served with a mouthwatering blue cheese dip, these will absolutely knock your guests socks off (if you can bear to share them).
Chicken is safe to eat at 74°C but it can still look a little pink around the bone at this temperature. To avoid pink meat, you can take the wings up to 81 – 90°C on your Thermapen and they will still be perfectly tender and fall off the bone.

I really love chicken wings, I love making them and I love eating them in a very messy and ritualistic manner. Give these grilled chicken wings a try and you wont go back to the messy deep fried chicken wing method.
Chicken wings and brine.
5 lbs chicken wings
2 21/2 cups buttermilk
1 cup dill pickle juice
1 cup franks red hot original
Spice Rub:
1/2 cup blackening seasoning of choice
3 tbsp onion powder
1 tsp garlic powder
1/2 tsp cayenne pepper
1 1/2 tsp black pepper
Wing Sauce:
1 1/2 cups franks red hot original
1 stick 4 oz cold unsalted butter
2 1/2 tbsp honey
pepper to taste
Blue cheese dip
5 oz blue cheese
3/4 cup sour cream
3/4 cup mayo
1/4 cup buttermilk
1 lemon juiced
1/2 tbsp Worcestershire sauce
Salt and pepper to taste
Fancy pants ranch
1 cup mayonnaise
1 cup buttermilk
1 packet hidden valley buttermilk version
2 tbsp fresh chives
2 tbsp fresh dill

Buffalo chicken wings are one of my favourite dishes, and it's hard to beat them. In this recipe, ill give you the secret to achieving the best flavour and crispy shell using one simple trick. Please enjoy.
Ingredients -
1.6kg (3.5lbs) - Chicken Wings, Drums & Flats Separated
Salt To Coat Lightly
Sunflower or Vegetable Oil For Frying
Buffalo Sauce -
100g (3.5oz) - Unsalted Butter
2 Bottles (300ml) - Frank's Hot Sauce
2 - Garlic Cloves, Crushed
1 Tbsp (20g) - Honey
Blue Cheese Dip -
4 Tbsp (110g) - Mayonnaise
2 Tbsp (60g) - Sour Cream
1 1/2 Tbsp (30ml) - Buttermilk
1 - Garlic Clove, Minced
1/4 tsp (0.5g) - Yellow Mustard Powder
50g (1.7oz) - Blue Cheese, Grated or Crumbled
Seasoning To Taste
Serving -
Carrots, Cut Into Batons
Celery, Cut Into Batons

Buffalo chicken wings with blue cheese dip – Savory
Are you looking for a perfect outdoor recipe? Don’t look any further: turn this into picnic fare by using 1½ pounds chicken drumsticks and baking a little longer. Bring plenty of napkins!
Ingredients
1 small fresh red chili pepper (or more, to taste)
4 garlic cloves
4 tsp honey
6 tbsp barbecue sauce
2 tbsp red wine vinegar
2 tbsp canola oil
1 tsp salt
3 lbs chicken wings
¼ cup mayonnaise
¼ cup sour cream
2 oz crumbled blue cheese
dash red wine vinegar
Marinade
Preheat the oven to 450°F. Line a large, rimmed baking sheet with parchment or foil.
Halve the chili lengthwise with a sharp knife and remove the stem and seeds. Finely dice the flesh. Combine the chili with the garlic, honey, barbecue sauce, vinegar, oil and salt in a mini food processor. Process until smooth. Add pepper to taste.
Bake until nicely browned
Toss the chicken wings with the marinade and spread them out on the lined baking sheet. Cover loosely with foil. Bake the chicken wings for about 20 min. in the middle of the oven. Remove the foil, turn the wings and bake for another 20 min. Bake until the wings are cooked through and nicely browned.
Blue cheese dip
For the dip, combine the mayonnaise, sour cream, cheese and vinegar to taste in a serving bowl. Season with salt (in moderation) and pepper, to taste. Serve the chicken wings with the blue cheese dip. That’s how you make Buffalo Chicken Wings with Blue Cheese Dip.

Ingredients
· 20 chicken wings (ends cut)
· ½ tsp sweet paprika
· 1 tsp onion (freshly grated)
· 4-5 garlic cloves, minced
· ½ tsp smoked paprika
· ½ tsp cayenne pepper
· 1 tbsp Italian seasoning
· ½ tsp salt (to taste)
· 1 tsp olive oil
Wing Sauce
· ¼ cup butter, melted
· ¼ cup tabasco sauce
· 1 tsp smoked paprika
· 1 tsp brown sugar
Blue Cheese Dressing
· ½ cup sour cream
· ¼ cup mayonnaise
· 1 garlic clove, minced
· 1 tbsp milk
· Crumbled blue cheese (plus more for topping)
· 1 tbsp lemon juice
· Green onion
Method
Step 1: Preheat oven to 400°F.
Step 2: In a bowl, combine the chicken wings, sweet paprika, onion, garlic, smoked paprika, cayenne pepper, Italian seasoning, salt, and olive oil; marinate for at least 1 hour in the refrigerator.
Step 3: Transfer the marinated wings to a baking tray (lightly brushed with oil) and bake for 40-45 minutes or until golden.
Step 4: To make the wing sauce, heat a skillet on medium heat and combine the melted butter, brown sugar, smoked paprika and hot sauce. Continue to cook, stirring occasionally, until the sauce thickens slightly. Reserve some of the sauce for serving.
Step 5: To make the blue cheese dipping sauce, combine the sour cream, mayonnaise, garlic, milk, blue cheese, lemon juice and sliced green onion; cover and refrigerate until ready to serve.
Step 6: Toss the chicken wings in the wing sauce ensuring that all are coated evenly.
Serve with our reserved hot wing sauce and delicious blue cheese dip.
