Ali Slagle is in the studio kitchen to show us how! In her fast and satisfying One-Pot Broccoli Mac and Cheese, everything is added all together in a large pot right from the get-go: The noodles are cooked in milk, which thickens to the consistency of cream, and the broccoli gets soft and sweet as it’s coated with gooey cheese.

Smoky Broccoli Mac N Cheese, but made vegan. Ever since I stopped eating dairy cheese, my stomach has been thanking me.
This spice blend gives it a smoky flavor that goes great with summer BBQ food. Try it out.
RECIPE:
Ingredients:
10 ounces noodles
1-2 heads broccolini
1 shallot
Smokey Cheese sauce:
1 carrot
1 gold potato
1/2 c coconut milk from a can
1/4 c vegetable broth
1 lemon juiced (1/3 cup)
2 tbsp flour (I prefer chickpea flour)
3 tbsp nutritional yeast
1 tbsp tomato sauce
1/2 tbsp white miso paste
1 tsp smoked paprika
1 tsp turmeric
1 tsp garlic powder
1/2 tsp salt
1/3 tsp ground black pepper
DIRECTIONS:
FOR THE CHEESE:
1.) Peel the carrot and potato, then cut the carrot and potato into chunks about 1 inch big.
2.) Boil the carrot and potato in water for about 7 minutes. Or until a fork can easily slide in.
3.) Add the carrot and potato to a blender. Add all of the other ingredients to the blender. Blend everything until smooth.
FULL RECIPE:
1.) Cook your noodle using the instructions on the box.
2.) Chop the broccolini to about 1 inch pieces.
3.) Mince the shallot very small.
4.) Cook the shallot and broccolini on a pan for about 5 minutes.
5.) Add the noodles and the cheese sauce to the pan with broccolini. Cook on low for 2 more minutes then turn off the heat.
6.) Enjoy!

Water - 2 cups

Butter - 2 tbsp
Onion - 1, chopped
Garlic - 3 to 4 cloves, chopped
Plain flour - 1 tbsp
Milk - 2 cups
Salt - as per taste

Chilli flakes - 1 tsp
Mixed herbs - 1 tsp
Mozzarella cheese - 2 tbsp

EASY BROCCOLI MAC AND CHEESE RECIPE | Richard in the kitchen
In this video I show you how to make an easy broccoli mac and cheese recipe. Mac and cheese has been a long time favorite side dish that can be served with just about any main dish. This delicious rich and creamy comfort food is easy to make, coming together in less than 30 minutes.
Shopping list:
8 ounces (3 cups dry) medium pasta shells
2 tablespoons salted butter
2 cloves garlic, minced
1 small shallot (about 1/4 cup), minced
2 tablespoons all-purpose flour
1 1/3 cups whole milk
1 cup half and half
1 teaspoon Dijon mustard
1/8 cup kosher salt for the pasta cooking water
Kosher salt and freshly ground black pepper to taste
2 cups chopped broccoli florets
2 cups extra-sharp cheddar cheese, grated
Directions:
In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions; drain well. DO NOT RINSE IT!!!
Melt butter in a large skillet over medium high heat. Add the shallot, and cook, stirring frequently, until fragrant, about 2 minutes. Add the garlic and stir about 30 seconds until fragrant.
Reduce heat to medium.
Add the flour and whisk until the rawness is cooked out, about 1-2 minutes.
Gradually whisk in milk, half and half and Dijon until slightly thickened, about 3-4 minutes. Salt and pepper, to taste.
Stir in pasta, broccoli and cheese until well combined, about 3-4 minutes.
Serve immediately.
