How To make Low Fat Scalloped Potatoes
Ingredients

each
potatoes
1 1/2
cup
milk, skim, or soy milk
2
tablespoon
flour
1/2
teaspoon
salt
1/4
teaspoon
garlic powder
1/4
teaspoon
cayenne pepper
1/2
cup
onion, chopped
1/2
cup
cheddar cheese, low fat, shredded, optional
Directions:
Peel and slice potatoes thinly. In a saucepan, combine milk, flour, salt, garlic powder and cayenne pepper and cook over medium heat until sauce thickens. Add onions to sauce.
Layer casserole dish with potato slices. Spoon half of sauce over slices and repeat with remaining potatoes and sauce. Cover and bake in oven preheated at 350 degrees for 60 min.
Optional: Remove from oven and sprinkle with low-fat cheddar cheese.

Easy vegan creamy garlic scalloped potatoes that are oil free is what I will be sharing with you today. This recipe is one my favorites and I hope it will be yours too. Here is what you will need to make these easy vegan creamy garlic scalloped potatoes that are also oil free:
Ingredients:
For the creamy garlic sauce
3 cups Yukon gold potatoes cubed
2 teaspoons garlic powder
1 teaspoon Italian seasoning
1 teaspoon onion powder
1-2 teaspoons salt
4 T nutritional yeast
squeeze of 1/4 lemon
1/4 cup cashew powder or 1/4 cup cashews
water from cooking potatoes 1 to 1 1/2 cups
Instructions:
Boil potatoes till soft and place all the ingredients into a high speed blender. Blend till smooth
Set aside.
For the scalloped potatoes
3 Yukon gold potatoes sliced thin
1 onion sliced thin
1 T minced garlic
1 8 ounce package Crimini mushrooms (or whatever mushrooms you like)
1 cup frozen chopped spinach.
Pepper to taste
Instructions:
Saute mushrooms in a bit of water until mushroom reduce by half and release their water. Then add garlic and saute for 1 minute. Then add spinach and cook for a couple of minutes till spinach thaws a bit.
Using a pie plate or casserole dish coat the bottom with some of the sauce.
Then start with a layer of potatoes and then onion and then the mushroom mix. Add more sauce and continue to layer the same way with the last layer being just potatoes. Cover the top layer with the rest of the sauce making sure all the potatoes are covered with sauce.
Cover and bake in a preheated oven @ 425 degrees for 35 to 45 minutes till potatoes are cooked through, then uncover and bake for 15 more minutes.

How to bake my version of Scalloped Potatoes
In my research on how to make scalloped potatoes I found that there is no classic recipe for this side dish. There are so many possibilities, you are free to do as you like. So I chose to make cheesy Scalloped Potatoes. (Julia Child used Swiss cheese.) These will go well with your holiday or Sunday roast. They are easy and they taste as good as they look. This is the third of three potato side dish videos I planned for the coming holidays.
