Steamed Glutinous Rice In Lotus Leaf tastes delicious at any time of the day, make sure to serve it piping hot.
Steamed Glutinous Rice In Lotus Leaf
2 1/2 Cups (600 grams) Glutinous Rice, soaked 2 to 3 hours, drained
8 Dried Shitake Mushrooms, soaked and stem removed, halved or quartered
1 1/2 Tbsp Peanut Oil
2 Lap Cheong, diced
3 Tbsp Dried Shrimps, soaked for 10 minutes, roughly pounded
4 Shallots, sliced
2 Garlic, chopped
3/4 Cup Frozen Roasted Chestnuts, thawed, optional
Sauce
1 Tbsp Oyster Sauce
1 1/2 Tbsp Light Soy Sauce
2 tsp Dark Soy Sauce
2 tsp Sugar
1/4 Cup Water
500 grams Chicken Breast or Thighs, boneless and skinless, cut into bite size
Marinate
2 tsp Oyster Sauce
1 Tbsp Light Soy Sauce
1 Tbsp Dark Soy Sauce
1 Tbsp Shaoxing Wine
1 tsp Sesame Oil
1/2 tsp 5 spice powder
A few dashes of White Pepper
5 to 6 Pieces of Dried Lotus Leaves, cut each piece into half, remove and rough edges
~soaked in boiling water for about an hour. Rinsed well and dry with paper towel.

已浸泡的虾米 20克 (Soaked dried shrimps 20g)
蒜米 1整颗 (1 Whole garlic)
浸泡隔夜后煮熟的栗子 10颗 (10 Chestnuts, Cooked after soaking overnight)
已浸泡的香菇 6颗 (6 Dried mushrooms, soaked)
食用油 少许 (Cooking oil a little)
盐 1茶匙 (Salt 1 tsp)
蚝油 1茶匙 (Oyster sauce 1 tsp)
水 50毫升 (Water 50ml)
糖 1茶匙 (Sugar 1 tsp)
晒油 1匙 (Dark soy sauce 1 tbsp)
【饭 Rice】
糯米 500克 (Glutinous rice 500g)
盐 1匙 (Salt 1 tbsp)
小葱油 2匙 (Shallots oil 2 tbsp)
晒油 1匙 (Dark soy sauce 1 tbsp)
水 100毫升 (Water 100ml)
【腌制酱料 Marinate Sauce】
盐 1茶匙 (Salt 1 tsp)
木薯粉 1匙 (Tapioca flour 1 tbsp)
生抽 1匙 (Soy sauce 1 tbsp)
料酒 1匙 (Seasoning wine 1 tbsp)
黑胡椒 1茶匙 (Black pepper 1 tsp)

Let's make chicken sticky rice in lotus leaves! In the past, I showed you how to make 荷葉糯米雞 (he ye nuo mi ji, or lo mai gai). And today I’d like to share with you a smaller version of it, which is called 珍珠雞 (zhen zhu ji). It's a super popular dim sum dish. Let's get started!
Chicken Sticky Rice Wrapped in Lotus Leaves Recipe:

Serves 10
Prep Time: Overnight, plus 2 hours and 30 minutes
Cook Time: 1 hour and 45 minutes
Ingredients:
5 lotus leaves, quartered (you can buy these at any Chinese supermarket, or online), rehydrated in water
4 dried shiitake mushrooms, rehydrated and thinly sliced
2 tablespoons dried shrimp, rehydrated
2 cups long-grained glutinous rice, soaked in water
1 1/4 cups water
For the chicken:
2 skinless, boneless chicken thighs, cut into bite-size pieces
1 tablespoon soy sauce
1 tablespoon Shaoxing wine
Pinch of five-spice powder
Pinch of white pepper
For the sauce:
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon dark soy sauce
1 teaspoon sesame oil
1/4 teaspoon five-spice powder
1/4 teaspoon white pepper
Additional ingredients:
2 tablespoons extra light olive oil, divided
2 links Chinese sausage, cut into thin rings
3 cloves garlic, minced
5 cooked salted egg yolk, halved

水二百四十毫升 240ml water
生抽三十克 30g soy sauce
老抽十五克 15g dark sou sauce
紹興酒十克 10g Shaoxing wine/dry Sherry
麻油十克 10g sesame oil
五香粉兩克 2g five spice powder
胡椒粉一克 1g ground pepper
薑汁八克 8GB ginger juice
砂糖四克 4g sugar
