How To make Lobster Newburg
2 9 oz lobster tails,
-removed from shells Melted butter or margarine 1/4 c Butter or margarine
2 T Flour
1/2 t Salt
Few grains cayenne pepper 1 1/2 c Light cream or milk
2 Egg yolks
1/4 c Sherry or dry white wine
1 t Lemon juice
1. Place lobster tails in a shallow, heat-resistant, non-metallic
baking dish and brush liberally with melted butter. 2. Heat, covered, in Microwave Oven 4 minutes or until tender.
Cut lobster into bite-sized pieces. Set aside. 3. In a deep, 1 1/2-quart, heat-resistant, non-metallic casserole
melt the 1/4 cup butter in Microwave Oven 30 seconds. 4. Blend in flour, salt and cayenne.
5. In a small bowl, beat cream and egg yolks until well blended.
6. Gradually stir cream mixture into flour mixture until smooth.
7. Heat, covered, in Microwave Oven 5 minutes or until sauce
thickens. Stir occasionally. 8. Stir in lemon juice, lobster pieces and wine. If necessary,
return to Microwave Oven 1 to 2 minutes or until heated through. 9. Serve over rice or toast points.
Variation: If desired, shrimp, scallops, crabmeat or any combi- nation of these may be substituted for lobster.

Lobster Newburg is one of our favourite dish when we visit the Restaurant. It cost between 200-250 kr to eat that :( But I am going to show you that you too can make it as delicious like from the restaurants at a much lower cost !!.

Lobster Newburg
Serve 4
Ingredients for 4 appetizer sized portions:
2 lobster tails meat (Approx 250 grams)
2 tbsp butter
2 or 3 tbsp White wine
salt & pepper to taste
1 large Onion
2 Hard cooked eggs
2 minced garlic
Cheese mixture
1/2 cup heavy cream
2 large egg yolks
50 grams Blue Cheese - Optional
Serve over buttered toast or in freshly baked puff pastry shells (video to follow)
Preparation
Heat butter over medium heat; add garlic, onion, Sauté, until onions is tender. Stir in white wine and cream. Let the sauce reduce till half until thickened and bubbly. Stir in the cheese mixture until melted. To thicken the filling, add some four & water mixture till thicken of your desire. Add lobster, cooked egg and salt and pepper, to taste. Heat through; stir in parsley, if using.
Spoon the creamed lobster mixture into hot baked puff pastry shells or over toasts.

1/2-3/4 bottle of Just Egg or Simply Egg
1/4 cup or more of vegan butter or margarine
2 cups of lobster mushrooms , cleaned, cut into chunks
1/2 dry sherry, Marsala, cognac, or Madeira
¾ cup unsweetened coconut milk
1 .5 Tsp of Just Magic Seasoning
1 pinch ground nutmeg
A few dashes of vegan Worcestershire and Hot sauce
Fresh Parsley Chopped
1/2 cube Vegan chicken bouillon (desired taste)
Salt & Pepper to taste
Puff pastry shells , I use Pepperidge Farms
Directions
Mix coconut milk, vegan egg, nutmeg, Worcestershire, Hot sauce, vegan chicken bouillon, Pepper, and set to the side
Bake puff pastry’s according to the box directions
Preheat a large pan to medium heat. Add in the wine and cook until half reduced . Melt butter and add in lobster mushrooms, season with my Just Magic seasoning and cook for 5 minutes.
Slowly add in cream mixture and whisk until the sauce thickens. Do not let the sauce come to a boil. Reducing heat may be necessary.
Cook over low heat for 2 minutes more. Remove from heat.
Serve classic lobster Newburg inside baked puff pastry shells sprinkle with fresh parsley and just to be extra, vegan Parmesan
Serve immediately
