What to Do with Leftover Salmon or Canned Salmon? Salmon Burgers!

RECIPE:

Salmon Burger Ingredients:
● 1 large Eggs beaten
● 11/2 tbsp Light Mayonnaise
● 1/2 tsp Lemon Juice
● 1 tbsp Onion minced
● 1/4 tsp Dried Parsley
● 1 dash Black Pepper
● 1.5 oz Canned Pink Salmon
● 1/4 cup Pork rinds, crushed
● 1 can Light Cooking Spray
For the Cucumbers:
● 1 oz Plain Non-Fat Greek Yogurt
● 2 tbsp Apple Cider Vinegar
● 1/2 tsp Dried Dill
● 1 dash Salt (optional)*
● 1 dash Black Pepper
● 3 cup Cucumber sliced
DIRECTIONS:
1.) In a small bowl whisk together the egg, light mayo, lemon juice, minced onion, dried parsley, and pepper.
2.) Gently fold in salmon (drained skinless and boneless pink salmon, packed in water)
3.) Crush pork rinds in a baggie with a rolling pin or bottom of a flat pan and add them to the salmon mixture.
4.) Divide mixture in half, and half again, and shape into four patties. Cook on a lightly greased skillet over medium-high heat until golden brown on both sides, about 5 minutes per side.
5.) Meanwhile, whisk together yogurt, vinegar, dill, salt (optional), and pepper. Pour over cucumber thinly sliced, and stir to mix in. Chill until ready to serve.

Deluxe Shrimp Burger (Korean McDonald's) | Seonkyoung Longest
We're making a homemade version of one of McDonald's of Korea's favorite burgers, the Deluxe Shrimp Burger.
INGREDIENTS:
For the spicy tartar sauce:
1 hard-boiled egg, chopped
2 green onions, chopped
1 1/2 tablespoons pickled jalapeño, diced small
1 teaspoon fresh lemon juice
1 tablespoon Sriracha
3 tablespoons mayonnaise
2 teaspoons sugar
Pinch of salt & pepper
For the shrimp patties:
1 pound small (51/60) shrimp, deveined, peeled and tails removed
1/4 cup tempura powder
1 egg
Pinch of salt & pepper
4 cups panko breadcrumbs
4 tablespoons water
Frying oil
To assemble:
4 sesame buns
Butter
Green lettuce or butter leaf
4 slices cheddar or American cheese
STEPS:
1.) In a small bowl, combine all ingredients for tartar sauce, and set aside.
2.) In a food processor, add half the shrimp and blend until it reaches a smooth and sticky paste texture. Combine this with the remaining whole shrimp, tempura powder, egg, salt and pepper. Mix until everything is well combined.
3.) Heat oil in a large skillet over medium-high heat. Spread panko on a large plate and mix with water.
4.) Scoop half of the shrimp mixture on top of the panko and coat evenly while shaping into a patty. Transfer to the skillet, and cook for 2 to 3 minutes on each side, or until fully cooked and golden brown.
5.) Spread butter on buns and toast until golden. On each bottom bun, add cheese, a shrimp patty, lettuce and tartar sauce. Cover with the top bun. If desired, make it double. Enjoy!
