How To make Linguini Tomato
4 c Tomatoes, roasted and
Blended 2 tb Garlic, roasted and
Chopped Salt, to taste Pepper, to taste 6 Servings linguini, cooked,
Rinsed in tap water, and Set aside 24 Roma tomatoes, grilled or
Oven-roasted and sliced 6 Portobello mushrooms (or
Other large mushrooms) Grilled or sauteed and Sliced 12 Fresh basil leaves
TO MAKE TOMATO SAUCE: In a heavy saucepan, mix 4 cups roasted tomatoes with garlic, salt, and pepper. Simmer over medium heat until reduced by one-third. JUST BEFORE SERVING: In a heavy skillet, bring the sauce to boil over medium heat. Add linguini ansd toss well. Blanch the 6 of the basil leaves in a little boiling water. TO SERVE: Divide the linguini among 6 pasta bowls. Alternate the Roma tomatoes and mushroom slices in a circle around it. Drain and put 1 leaf in the middle of each bowl. Ingredients:
* Tomatoes - 3pc
* Kashmiri Red Chillies - 4pc
* Water
* Spaghetti
* Salt
* Oil - 1 tsp
* Butter - 1 tsp
* Onions - 1pc
* Handful Coriander Stem
* Oregano - 1 tsp
* Chilli Flakes - 1/2 tsp
* Pepper - 1/4 tsp
* Cream - 2 tsp
* Handful Coriander Leaves
* Cheese
Recipe:
1. Slit the tomatoes and add them in boiling water with some Kashmiri red chillies.
2. Transfer to a bowl with cold water to blanch them. Peel off the skin and cut it into pieces.
3. Blend them to form a paste.
4. Boil the spaghetti in hot water with some salt.
5. To a pan, add oil, butter, chopped onions and coriander stem.
6. Once the onions become translucent, add oregano, chilli flakes, tomato-red chilli puree, salt and pepper. Let it cook till oil rises.
7. Add cream, little bit of pasta water and coriander leaves. Mix well.
8. Add the boiled spaghetti, toss it in the sauce, top with some cheese and it’s ready. Enjoy!

To Make Spaghetti
Spaghetti - 250 Gms
Salt - 3 Tsp
Oil - 2 Tbsp
Garlic - 2 Tbsp
Onion - 1 No.
Tomato - 4 Nos
Pepper - 1 Tsp
Sugar - 1 Tsp
Chilli Flakes - 1 Tsp
Italian Seasoning - 2 Tsp
Tomato Puree
Extra Virgin Olive Oil - 1 Tbsp
Basil Leaves
Parmesan Cheese
Method:
1. For the tomato puree, make two cross slits in the tomatoes.
2. Drop them gently into the boiling water in a saucepan.
3. Blanch the tomatoes for 10-15 mins.
4. Remove them from the saucepan after that and cool them completely.
5. Cut the tomatoes into smaller pieces roughly and then transfer them to a mixer jar. Grind it all into a fine puree. Keep the puree aside.
6. Pour some water in a saucepan and boil it. Add salt to it and mix well.
7. Gently drop in the spaghetti and cook it for 15 mins.
8. Once done, strain off the excess water and add olive oil to the cooked spaghetti to make sure they don't stick to each other. Keep it aside.
9. Take a pan, add oil, heat it, add chopped garlic.
10. Roast the garlic for 20-30 seconds and add in the chopped onions. Roast for 2 mins.
11. Add in the chopped tomatoes and roast them for 2 more mins.
12. To the pan, add salt, pepper powder, sugar, chilli flakes and Italian seasoning.
13. Mix it all well and cook for 10 mins.
14. After 10 mins, add tomato puree, mix and let it simmer for 10 mins.
15. Check for seasoning in the sauce and add salt as required.
16. Gently drop the cooked spaghetti into the sauce and toss it nicely.
17. Finally add some olive oil and basil leaves. Mix well and grate some parmesan cheese over it.
18. Italian Spaghetti with red sauce is ready to be served hot and nice.
