Creamy Herb and Garlic Shrimp Pasta

This is one of my go-to weeknight meals. This shrimp pasta is simple and versatile, with ingredients that can be easily adapted and swapped out. It is just creamy enough without being drowned in heavy sauce. The heavy use of herbs and garlic give this dish tons of flavour, so don’t skimp! If you make this, leave a comment for me below!
Ingredients (Serves 4 to 5)
700g raw frozen or fresh shrimp, peeled
2 tablespoons of olive oil
1 small bunch of parsley
1 small bunch of cilantro (coriander)
2 stalks of green onion
Half a bulb of garlic, minced
*1 tablespoon of salt, split
1.5 teaspoons of garlic powder, split
1.5 teaspoons of black pepper, split
1 teaspoon of chili flakes (optional)
2.5 litres of salted water, boiled
340 grams of pasta of choice (about 1/3 of a 900g packet)
1 cup of chicken broth
1 cup of heavy cream
1 tablespoon of cream cheese
Method
1. Soak shrimp in a bowl of cold water. Peel the shrimp entirely. Leaving the tail on is optional. Drain.
2. Lay shrimp out on a piece of parchment, double lined with paper towels to absorb extra moisture. Pat the shrimp dry with another paper towel until most of the moisture is gone. Place in a dry bowl.
3. Add 1 teaspoon of salt, 1 teaspoon of garlic powder, and 1 teaspoon of black pepper to the shrimp and toss until well coated. Set aside.
4. Fill a pot with 2.5 litres of water and bring to a boil. Add pasta. Set a timer for 5 to 7 minutes to remember to check on your pasta. You do not want to overcook it!
5. In a large frying pan, add two tablespoons of oil and set the burner to high heat. Quickly add in the minced garlic while the oil is still cold to let the garlic infuse. Once the garlic begins to fry and brown slightly, add in the herbs and green onions. Allow these to cook down until crisp and herbs are halved in volume.
6. Check pasta. Drain when al dente and set aside. (optional: toss in a little bit of olive oil if you are worried about your pasta sticking together).
7. When your herbs and garlic are crisp, add in the raw shrimp. Then, add the remaining salt, garlic powder, black pepper and chili flakes. Stir well and remove from heat when the shrimp are no longer translucent and have turned pink.
8. In a large skillet over high heat, combine 1 cup of chicken broth and 1 cup of heavy cream. Add in 1 tablespoon of cream cheese and reduce until thickened slightly. Turn off burner.
9. Add in shrimp and pasta. Stir well until pasta is well coated in sauce.
10. ENJOY!
*Note: Adjust salt according to your own taste.
One-Pot Lemon Garlic Shrimp Pasta
One-Pot Lemon Garlic Shrimp Pasta
Servings: 4
INGREDIENTS
8 ounces linguine
2 tablespoons olive oil
8 tablespoons (1 stick) unsalted butter
4 cloves garlic, minced
1 teaspoon crushed red pepper
1 ¼ pounds large shrimp
Salt and pepper to taste
1 teaspoon dried oregano
4 cups baby spinach
¼ cup parmesan
2 tablespoons parsley, chopped
1 tablespoons lemon juice
PREPARATION
1. In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente.
2. Drain and set aside pasta.
3. In the same pan, heat olive oil and 2 tablespoons of butter. Add garlic and crushed red pepper, cook until fragrant.
4. Toss in shrimp, salt and pepper to taste, and stir until shrimp are turning pink, but not fully cooked.
5. Add oregano and spinach, cook until wilted.
6. Return cooked pasta to the pot, add remaining butter, parmesan, and parsley. Stir until well mixed and the butter is melted.
7. When the shrimp is cooked, add lemon juice, mix once more, then serve while hot.
