How To make Lime Chicken
6 ea Chicken thigh
2 T Oil
1 ea Onion, med; chopped
2 ea Garlic clove; crushed
1/4 t Thai chile, dried; crushed
1 t Cumin, ground
1 t Coriander, ground
1/2 t Turmeric
2 T Soy sauce
1 x Lime wedges
Calories per serving: 357 Fat grams per serving: 6 Approx. Cook Time: 0:30 Brown chicken in oil. Add the remaining ingredients in the order listed. Reduce the heat and simmer, covered, 15 to 20 minutes or until the chicken is tender. Serve with lime wedges.

CHILI LIME CHICKEN RECIPE

6 Boneless Skin on Chicken Thighs
3 Teaspoons Lime Zest
4 Tablespoons Lime Juice
2 Chilis
1 Clove Garlic
Handful of Coriander | Cilantro
2 Tablespoons mild tasting Oil
1 Teaspoon Honey
1/2 tsp Salt
Zest and juice 2 limes into a bowl large enough to accommodate the chicken thighs. Dice the chili, garlic, and coriander or cilantro finely and place into the bowl. Add the oil, honey, and salt and stir until everything is evenly combined. Rinse and pat dry the chicken thighs and add to the bowl with the marinade ingredients. Toss the chicken in the marinade until well coated and cover with plastic wrap. Leave the chicken to marinade in the fridge for at least 2 hours but preferably over night. When you are ready to cook the chicken remove it from the fridge and allow it to come up to room temperature. Heat a griddle pan over medium high heat and add the chicken thighs, cooking for about 4 minutes on each side until golden brown and cooked through. Alternatively you can cook these on the bbq outside or in the oven under the grill. Serve the chicken with more chopped coriander or cilantro and a squeeze of lime juice.

Cilantro lime chicken ingredients:
Cilantro lime marinade
• 1 chicken breast
• Salt to taste
• 1 tsp black pepper powder
• 1 tsp cumin powder
• 1 tsp brown sugar
• 1/2 tsp cayenne pepper
• 2 tsp garlic (finely chopped)
• 2 tbsp lemon juice
• 2 tbsp cilantro (coriander leaves)
• 1 tsp lemon zest
To pan-fry cilantro lime chicken
• 2 tbsp oil
To make lemon chicken
Step by step instructions to make cilantro lime chicken
1. Flatten the chicken breast by patting it gently with a rolling pin.
2. Marinate it with cilantro lime marinade. Set it aside for a minimum of 2 hours in the refrigerator.
3. Pan-fry the marinated chicken until golden on both sides. Set it aside.
4. Cilantro lime chicken is ready to serve.
Cooking tips:
1. Marinate for at least 2 hours to get the soft and juicy lime cilantro chicken.
2. The lime-cilantro marinade sticks to the bottom of the pan. So, while pan-frying it, add 2 tbsp water at regular intervals to prevent the chicken from sticking to the pan.
3. Once ready, let the chicken rest for 10 minutes before slicing it.

Cilantro lime chicken on the @biggreenegg . ⠀
For the marinade I used the following:⠀
- handful of cilantro⠀
- juice of 3 limes⠀
- 2 tbsp olive oil⠀
- 4 cloves minced garlic⠀
- 2 tsp each: @thespicehouse cumin, paprika, chili powder, onion powder, salt and pepper⠀

Blend everything together and mainate the chicken for 2-3 hours in the fridge. Once done, I grilled these on the @biggreenegg , starting on the direct side at 400 degrees to get some nice color and char on the chicken. Then I moved them to the indirect side to finish cooking. About 25-30 minutes or so. ⠀

Pull, top with chopped cilantro, a squeeze of lime juice, and this chicken was ready to go.
