How To make Lime Glazed Chicken
4 boneless skinless chicken breasts
1 cup flour
1 dash salt
1 dash garlic powder
1 teaspoon lemon pepper
1 egg
1/4 cup peanut oil
3 limes
1/2 cup chicken stock
Parsley -- chopped garnish
Directions: Mix flour with salt and lemon pepper. Season chicken breasts with salt and lemon pepper and garlic powder. Dredge in flour mixed with salt and lemon pepper, then egg, then flour mixture again. Brown in hot skillet until done, turning several times. Deglaze pan(after removing cooked chicken) Deglaze pan(after remaining cooked chicken) with chicken broth, and stir while cooking to reduce liquid by half. Add lime juice and cook down several minutes until thickened. Drizzle over cooked chicken pieces and garnish with fresh lime slices and parsley. Serves 4.

Ingredients
2 cup Chicken Stock
1 Nos Chicken Breast
Salt
1 Tsp Black Pepper
1 Tsp Dark Soya Sauce
1 Tbsp Chopped Garlic
1 Nos Egg
½ Cup Maida
½ Cup Corn Flour
Oil For Deep Frying
2 Nos Lemon
2 Tsp Powdered Sugar
Salt To Taste
1 Nos Lemon Slices
2 Nos Green Chillies Slit
1 Tsp Chopped Ginger
½ Pinch Food Grade Lemon Colour
Oil
1 Tsp Chopped Garlic
1 Cup Spring Onion Bulbs
1 Tsp Sesame Seeds
1 Tsp Chopped Spring Onion
Method:
Reduce Two Cups Of Chicken Stock To Half
Butterfly The Chicken Breast Into Two And Cut Into Uniform Thin Slant Slices
Marinate The Chicken With Salt, Black Pepper, Chopped Garlic, Egg, Maida And Corn Flour
Heat Oil In A Pan And Deep Fry Till Crisp.
For The Sauce Add Lemon Juice Of Two Lemons In The Stock
Add Sugar And Stor Till It Dissolves
Add Salt To Taste, Lemon Slices Without Seeds For Two Minutes To Infuse Lemon Flavor
Add Slit Green Chillies And Ginger
And Reduce The Stock
Add A Pinch Of Edible Food Grade Yellow Colour.
Finally, Add Corn Flour Slurry To Make A Thick Sauce
Heat Oil In A Fry Pan Add Chopped Garlic And Cook Till It Is Golden Brown
Add Slices Of Spring Onion Whites And Toss On High Flame
Add Chicken, Sesame Seeds And A Ladle Of Sauce To Coat The Chicken
Finally, Add Spring Onion And Serve Immediately

1/2 cup katsup
White rice
1 cup soy sauce
1 cup honey
Salt, pepper, garlic powder,
1 To 2 Sazon packets opitional
7 Fresh garlic cloves chopped fine
Oil to coat pan
1/4 cup chicken broth
3 Tablespoon Sofrito if you don’t make sofrito store bought is fine

INGREDIENTS
FOR THE MARINADE
1/2 c. sweet chili sauce
3 tbsp. low-sodium soy sauce
Juice of 1 lime
1 tbsp. honey
2 tsp. freshly grated ginger
2 cloves garlic, minced
1 tbsp. sriracha
FOR THE CHICKEN
4 bone-in skin-on chicken thighs
2 tsp. vegetable oil
2 green onions, thinly sliced
Chopped peanuts, for garnish
Cooked rice, for serving
Lime wedges, for serving
DIRECTIONS
1. Preheat oven to 425º. In a large bowl, whisk together all ingredients for the marinade. Add chicken thighs and toss until coated. Let marinate 20 minutes.
2. In a large ovenproof skillet, heat vegetable oil. Add thighs and sear until charred, 2 to 3 minutes per side. Transfer to oven and bake until chicken is no longer pink, 15 minutes.
3. Garnish chicken with green onions and peanuts and serve with rice and limes.
