Simple, fast and delicious vegan tomato soup with red lentils
I love tomatoes and I love tomato soup!
Tomato soup is probably one of the most likable veggie soups there is. I mean, who doesn’t like tomato soup? Even here in cold Norway where we import most of our tomatoes it’s still the most popular soup. There is just something special about tomatoes in the way the enhance the flavours in a dish and brings it all together.
In this recipe I use red lentils as a thickener. I use lentils as thickener in lot’s of soups, casserole dishes and curries. It’s a great way to bring the flavours together as well as adding essential nutrients like protein, fiber and complex carbohydrates to mention a few.
This recipe yields 4 servings.
Ingredients
800 g fresh tomatoes (preferably skinned) or canned tomatoes -
1 zucchini in coarse pieces
1 yellow or red bell pepper in coarse pieces
1 chili with seeds in coarse pieces (optional)
100 g red or yellow lentils
0,7 dl vegetable broth or water -
Salt
Place all the ingredients for the soup in a casserole.
Bring to a boil, lower the the temperature and put a lid on.
Let it simmer for 30 minutes.
Blend with an immersion blender or transfer to a blender and blend smooth.
Season with salt.
Serve the soup with the pulses and some freshly baked bread :) -

Grilled Cheese & Roasted Tomato Soup
Good soup ????
Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.

INGREDIENTS:
1 cup Red Lentils (rinsed)
⅓ cup Green (Fancy) Lentils (rinsed)
2 28 oz cans Tomatoes
½ cup Dry Red Wine (substitute with broth)
6 Garlic Cloves (chopped)
1 Yellow Onion (chopped)
1 tablespoon Tomato Paste
1 teaspoon Pink Salt
1 teaspoon Cane Sugar (optional)
1 teaspoon Dried Basil
1 teaspoon Dried Parsley
2 Bay Leaves
¾ teaspoon Red Chili Flakes (optional)
1 tablespoon Garlic Bouillon
1 tablespoon Vegetable Bouillon
4 cups Filtered Water
2 oz Fresh Spinach
½ oz Fresh Basil
½ oz Fresh Parsley
1 teaspoon Ground Pepper
¼ cup Low Fat Coconut Milk
1 teaspoon Pink Salt (optional)
INSTANT POT INSTRUCTIONS:
1. Add onion, garlic, tomatoes, lentils and dried spices to the instant pot, along with bouillon & water. Set instant pot to HIGH pressure for 18 minutes. Allow 10 minutes of natural pressure and then perform a quick release.
2. Add spinach, fresh herbs and coconut milk to the pot and stir. Using an immersion blender, blend until desired consistency. Ladle into bowls and top with a drizzle of coconut milk, more red chili flakes, and fresh herbs. Enjoy!
STOVE TOP INSTRUCTIONS:
1. Add onion, garlic, tomatoes, lentils and dried spices to a large pot along with bouillon & water. Bring to a boil and then simmer for one hour.
2. Add spinach, fresh herbs and coconut milk to the pot and stir. Using an immersion blender, blend until desired consistency. Ladle into bowls and top with a drizzle of coconut milk, more red chili flakes, and fresh herbs. Enjoy

المكونات وطريقة عمل شوربة العدس التركي
اغسل كوبين من العدس الأحمر وانقعه في
ماء لمدة 20 دقيقة
أضف القليل من زيت الزيتون في وعاء
ويطهى البصل (150 جرام) حتى يتكرمل
ثم أضف المكونات التالية:
جزر (170 جرام)
بطاطس (200 جرام)
ثلاث فصوص ثوم (15 جرام).
الطماطم (220 جرام)
أضف العدس
ملح حسب الرغبة وملعقة صغيرة من البابريكا ، نصف ملعقة صغيرة من الفلفل الأسود والكركم
أوراق الغار
غطها بالماء الساخن
اطبخ الحساء على نار متوسطة لمدة 30 دقيقة
ثم قم بإزالة أوراق الغار
اخلط الحساء للحصول على قوام سلس
في مقلاة منفصلة نذوب الزبدة (45 جرام) مع ملعقة صغيرة من البابريكا لمدة دقيقتين
اسكبه فوق الحساء عند تقديمه.

Ingredients and how to make the Turkish lentil soup
Wash two cups of red lentils and soak it in cold water for 20 minutes
In a pot add a little bit of olive oil
and cook the onions (150 grams) until they caramelize
Then, add the following ingredients:
Carrots (170 grams)
Potatoes (200 grams)
Three cloves of garlic (15 grams)
Tomatoes (220 grams)
Add the lentil
Salt to taste and one tsp of paprika, nad half a tsp each of black pepper and turmeric
Bay leaves
Cover with hot water
Cook the soup over medium heat for 30 minutes
Then remove the bay leaves
Blend the soup to a smooth consistency
In a separate pan melt the butter (45 grams) with one tsp of paprika for 2 minutes
Pour it over the soup when you serve it.
