Turkish Red Lentil Soup
Serves 5-6
Recipe in English:
Ingredients:
-Cooking oil 1 tbs
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) cloves 3
-Masoor daal (Orange lentil gram) 1 Cup (washed)
-Aloo (Potato) cubes 1/4 Cup
-Tamatar (Tomato) cubes 1 medium
-Gajar (Carrot) 1/4 Cup
-Namak (Salt) 1 tsp or to taste
-Hot water 1 & ½ litre
-Cooking oil 1 tbs
-Makhan (Butter) 1 tbs
-Tomato paste 2 tbs
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Paprika powder 1 tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Dried mint 1 tsp
Directions:
-In a pot add cooking oil, onion, garlic, mix well and sauté until translucent.
-Add orange lentil gram, mix well and cook for 1 minute.
-Add potato, tomato, carrot, salt, mix well and cook for 2-3 minutes.
-Add hot water, mix well and bring it to boil. Cover and cook on low flame for 20-25 minutes then blend well with the help of hand blender.
-Take out 1/4 Cup lentil soup for later use.
-In frying pan add cooking oil, butter and let it melt.
-Add tomato paste, mix well and cook for 2 minutes.
-Add red chilli powder, paprika powder, black pepper crushed and mix well.
-Gradually add reserved lentil soup and mix well.
-In lentil soup add prepared tomato paste mixture. Mix well and bring it to boil. Add dried mint and mix well.
-Garnish with dried mint & serve hot!

Directions:
-Pot mein cooking oil, pyaz aur lehsan daal ker ache tarha mix karein aur translucent honay tak sauté ker lein.
-Masoor daal dal ker ache tarha mix karein aur ek minute k liye paka lein.
-Aloo, tamatar, gajar aur namak daal ker ache tarha mix karein. 2-3 minutes k liye paka lein.
-Hot water daal ker mix karein aur ubal anay ka baad dhak dein aur halki ancch per 20-25 minutes k liye pakayen phir hand blender ki madad sa ache tarha blend ker lein.
-1/4 Cup lentil soup baad mein use kernay kliya nikal lein.
-Frying pan mein cooking oil aur makhan daal kar melt ker lein.
-Tomato paste daal ker ache tarha mix karein aur 2 minutes tak pakayen.
-Lal mirch powder, paprika powder aur kali mirch crushed daal ker ache tarha mix karein.
- Alag kia hua lentil soup thora thora ker k shamil karein aur ache tarha mix ker lein.
-Lentil soup mein tayyar tomato paste mixture daal ker ache tarha mix karein aur ubal anay k baad dried mint daal den.
-Dried mint sa garnish ker k garam garam serve karen.

Ingredients:
2 cups red lentils
2 large russet potatoes
1 carrot
1 onion
3 pieces garlic
1 tomato
7 cups water
3 tbsp olive oil
2 tsp cumin
2 tsp salt
lemon wedges to serve
few sprigs parsley
zaa’tar to taste
pepper to taste
Directions:
1. Rinse and drain the red lentils and set aside. Peel the russet potatoes and chop into small cubes.
2. Finely chop the carrot, onion, and garlic. Dice the tomato
3. Use a kettle and bring the 7 cups of water to boil
4. Heat up a stock pot to medium heat. Add the olive oil followed by the onions. Sauté for 3-4min
5. Add the carrots and sauté for 2min. Add the garlic and sauté for 1min
6. Add the cumin, salt, and pepper. Sauté for another minute. Then, add in the red lentils and tomato. Sauté for another minute
7. Add the potatoes and pour in the hot water. Give the pot a good stir
8. Bring the soup to a boil, then cover and cook on medium for 20min
9. Transfer 3-4 cups of the soup to a blender. Blend on medium low for a few seconds. Then, pour the soup back into the pot and give it a good stir to combine
10. Plate the soup and garnish with fresh lemon juice, chopped parsley, a drizzle of olive oil, a sprinkle of zaa’tar, and fresh cracked pepper to taste

Ingredients:
1 large Onion, chopped
2 Celery stalks, chopped
2 medium Carrots, diced
2-3 Garlic crushed, crushed
2 tablespoons Olive oil
1 teaspoon Cumin
1 teaspoon Dried oregano
1 teaspoon Paprika
Salt to taste
Pepper to taste
1 can (14oz/400g) Diced tomatoes/chopped tomatoes
8 cups (2L) Vegetable stock
2 cups (380g) Dried lentils, rinsed
2-3 tablespoons Parsley/coriander, chopped
2 tablespoons Lemon juice, fresh
Directions:
1. In a large pot heat olive oil, add chopped onion and sauté for 6-7 minutes, until slightly golden. Add chopped celery and diced carrots, cook for 4-5 minutes, until tender. Add crushed garlic, cumin, dried oregano, paprika and cook, stirring for 1 minutes.
2. Add minced/chopped tomatoes and cook for 1-2 minutes.
3. Add rinsed lentils, vegetable stock, salt and pepper. Bring to a boil over high heat, then, reduce the heat to low, cover with a lid, and simmer for 30-45 minutes. Check the seasoning and add salt/pepper if needed.
4. Add chopped coriander/parsley, lemon juice, give a quick stir and turn the heat off.
5. Serve!
