How To make Lentil & Tomato Soup
3 tb Vegetable oil
2 lg Onions, chopped
1 sm Garlic clove, crushed
1 ts Rosemary
1 3/4 c Stock
8 oz Lentils, cooked
1 lg Carrot, diced
1 ea Celery stick, chopped
14 oz Canned tomatoes, chopped
1 pn Arame seaweed
1 ts Miso
1/2 ts Cumin
Salt, to taste Heat the oil in a soup pot & saute the onions, garlic & rosemary for 5 minutes. Add the stock, lentils, carrot, celery, tomatoes & seaweed. Bring to a boil, reduce heat, cover & simmer for 20 minutes. Blend the contents till smooth with the miso, cumin & salt. Reheat & serve hot.

1/4 cup (54 grams) extra virgin olive oil - plus more for finishing
1 medium onion - diced
2 ribs celery - diced
2-3 medium carrots - diced
1 teaspoon (~2 grams) dried oregano
3 ounces (84 grams) tomato paste
8 ounces (226 grams) canned plum tomatoes hand crushed
8 ounces (226 grams) baby spinach
8 cups (1890 grams) water
16 ounces (454 grams) brown or green lentils see notes below
1 rind Parmigiano Reggiano (optional)
salt and pepper to taste

Italian Tomato and Lentil Soup - Easy Dinner Recipe
A lot of you have been asking for the recipe of this Italian tomato and lentil soup since I posted a picture of it on Instagram a few times. It's super easy to make, it's full of nutrients, and it's absolutely delicious, so it's a weekly staple at my home.
Here's what you'll need for the soup:
♥ 1 large onion
♥ half a small chorizo (or bacon, smoked ham or sausage)
♥ 3 tbsp olive oil
♥ 2 medium carrots
♥ 2 celery stalks
♥ 2 bay leaves
♥ dried rosemary
♥ 500g of fresh tomatoes (around a pound) or a 400g can of chopped tomatoes
♥ 1.7l (just under 2 quarts) of vegetable broth, chicken broth or water
♥ salt and pepper

just for you to ENJOY!! Episode 223
6 - 8 serving
2 cup brown lentil soaked for 10 minutes and rinsed
1/3 cup olive oil
2 medium onions med diced
10 clove garlic fine chopped
3 tbsp tomato paste
400 ml diced tomatoes ( store bought )
4 cup vegetable broth
3 cup water
1 1/4 tsp cumin
1/4 cup lemon juice
salt and pepper to your taste
garnish with drizzle of olive oil,
chopped green onions and ENJOY!!
