How To make Lemon Pancakes
1/2 c All-purpose flour
3 ts Baking powder
3 tb Sugar
1/4 ts Salt
1/4 c Skim milk
1/2 c Club soda
1 Egg yolk
2 tb Minced lemon zest
1 t Vanilla extract
1 tb Canola oil
2 Egg whites
In a large bowl, combine the dry ingredients. Add the milk, club soda, egg yolk, lemon zest, vanilla, and oil, and beat well. In a separate bowl, beat the egg whites on high speed until stiff peaks form. Carefully fold the egg whites into the batter. Lightly spray or wipe a large regular or nonstick skillet with vegetable oil. Place the skillet over medium-high heat; drop the batter into the pan by tablespoonfuls to form 2-inch pancakes, and cook until they are golden brown on both sides. Per pancake: Cal. 39, Carb 6g, Protein 1g, Chol. 11mg, Fat 1g/28% Variations: Omit the lemon zest and add one of the following to the batter: 2 tablespoons minced lime zest

1 1/2 cups fresh blueberries

LEMON RICOTTA PANCAKES RECIPE
INGREDIENTS
1 Cup /250g Ricotta Cheese
2 Eggs
1/2 Cup / 125ml Milk
1 Lemon Zested
1 Cup / 125g Flour
1 tsp Baking Powder
3 Tbsp / 25g Sugar
1/2 tsp Salt
INSTRUCTIONS
In a medium sized mixing bowl add the ricotta cheese, eggs, milk and lemon zest. Mix the ingredients together with a whisk or wooden spoon until well combined.
In a smaller mixing bowl add the flour, baking powder, sugar and salt. Mix together until combined.
Pour the dry ingredients into the bowl of the wet ingredients and fold the pancake batter together with a wooden spoon. Stop mixing as soon as there is no longer any dry flour.
Heat a medium sized frypan over medium-low heat and add 1/2 tsp of butter.
Pour 1/3 Cup of pancake batter into the frypan and cook the pancake for about 3 minutes or until the edges are starting to set. Flip and cook on the other side for a further few minutes.
Repeat with the remaining pancake batter.
NOTES
Serve the pancakes dusted with powdered sugar and optionally some syrup

Pancakes with Lemon and Sugar are easy to make is Lovely Sweet Breakfast Treat.
Take Just 5 ingredients and less than 20 minutes to make.
Ingredients for Pancake mixture
1 Cup Self-raising Flour or Plain Flour
250ml Milk
2 Eggs
To Serve
Lemon juice
Sugar
Lemon wedges
Method
Sieve the flour into a bowl. Beat the eggs and milk together in a separate bowl. Add the milk mixture to the flour gradually to form a smooth batter.
Heat a non-stick pan over medium-high, lightly oil and pour in the required amount batter and spread it out, cook on both sides until golden.
Sprinkle over sugar and lemon juice and serve immediately.

1-3/4 cups All-Purpose Flour
1 Tbl. Baking Powder
1 tsp. Kosher Salt
1-1/2 cups Buttermilk
2 ea. Eggs
1 tsp. Vanilla
2 Tbls. Vegetable Oil
2 cups Fresh Ricotta Cheese
4 Tbls. Granulated Sugar
2 Tbls. Lemon Zest (minced)
2-1/2 tsps. Vegetable Oil
Instructions
Place the flour, baking powder and salt into a mixing bowl. Stir all of the ingredients together until evenly combined. Set aside.
Pour the buttermilk into another mixing bowl. Add the eggs, vanilla and oil into the bowl.
Add the ricotta cheese, sugar and lemon zest into the bowl with the buttermilk. Using a wire whisk, gently stir the ingredients together until evenly combined.
Add the flour mix into the bowl with the buttermilk and ricotta cheese. Continue to fold the ingredients together until evenly combined with a few small lumps remaining in the batter. Do not over mix the batter.
Heat 1/4 tsp. of vegetable oil on a griddle or in a large non-stick pan. Using a 4 oz. ladle, pour the batter onto the griddle or into the non-stick pan, forming one pancake that is 6” in diameter.
Cook the pancakes for approximately 2-1/2 minutes or until the edges begin to dry and puff up with little air bubbles will start appearing over the top surface of the pancakes.
Flip each pancake over and continue to cook for another 1-1/2 minutes or until done.

You’ll need
2 eggs
2 tbsp granulated sugar
200 ml milk
1 + ¼ cups all-purpose flour
2 tsp baking powder
2 tsp vanilla powder
To cook;
Oil
1 cup = 240 ml
Here’s how
1- Whisk together 2 eggs and 2 tablespoons of granulated sugar.
2- Add 200 ml of milk, 1 + ¼ cup of all-purpose flour, 2 tsp of baking powder and 2 tsp vanilla powder. Beat until you have a smooth batter.
3- Heat a lightly oiled non-stick frying pan over a medium heat.
4- Gently pour about 1 tbsp of batter onto the hot pan.
5- Wait until the bubbles form on the surface and once they start popping, flip the pancake over and cook until both sides are golden.
6- Repeat until all the batter is used up.
7- Once both sides are golden, transfer to a serving plate!
