1 3/4 C. flour 2 Tsp. baking powder 1 egg 1 Dash salt 1 C. milk Dressing: 1 C. sugar 1 Tbsp. butter 2 Tbsp. flour 1 Pt. water lemon flavoring Mix and drop by the teaspoonfuls into deep fat. Fry until golden brown. Dressing (or sauce): Combine in a saucepan and cook until thick. Pour over the fritters.

How to Make Lemon Herb Tuna Fritters
A quick and light lunch or snack straight outa the pantry.

What You Need:
2 5 oz. cans tuna, squeezed of all their nasty can juice 2 TBL mayonaise 1 lemon, zested and juiced 1 egg, beaten 3 green onions, minced 1/2 cup panko 2 TBL olive oil 2 TBL cilantro, minced Salt and Pepper to taste Hot sauce, sliced lemons and tartar sauce, to serve
1. In a small bowl, mix together tuna, lemon juice and zest, egg, green onions and mayo. Add a pinch of salt and pepper. Mix. Form into six small patties and place on a foil lined sheet in freezer for no more than ten minutes.
2. In a small bowl mix together panko, olive oil, cilantro and a pinch of salt and pepper. Retrieve patties from freezer.
3. Preheat oven to 400 degrees. Roll rested patties in panko breading. Place back on foil lined sheet. Cover patties in remaining breading if you have any. Bake for 15-20 mins or until golden and crispy.
4. Allow fritters to cool a few minutes then serve. Enjoy with any of your favorite seafood condiments.
