How To make Lemon Blueberry Biscuits
2 c All-purpose flour
1/3 c Sugar
2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
8 oz Carton lemon yogurt
1 Egg
lightly beaten
1/4 c Butter or margarine :
Melted 1 t Grated lemon peel
1 c Fresh or frozen blueberries
Glaze: 1/2 c Confectioner's sugar
1 tb Lemon juice
1/2 ts Grated lemon peel
In a large bowl, combine dry ingredients. Combine yogurt, egg, butter and lemon peel; stir into dry ingredients just until moistened. Fold in blueberries. Drop by tablespoonfuls onto a greased baking sheet. Bake at 400 for 15-18 minutes or until lightly browned. Combine glaze ingredients; drizzle over warm biscuits. HOMEMADE GLAZED BLUEBERRY BISCUITS!
INGREDIENTS:
2 cups all purpose flour
1/3 cup sugar
2 tsp himalayan salt or kosher salt
1/2 tsp baking soda
2 tsp baking powder
1 stick unsalted butter ( cubed and chilled)
1 cup buttermilk
1 cup freeze-dried or dried blueberries
GLAZE:
1/2 cup powdered sugar
1 tbsp fresh lemon juice
1 tsp vanilla extract
DIRECTIONS: Sift the flour, sugar, baking powder, salt, and baking soda in a medium bowl. Add butter and squeeze it into flour until a crumbly, sandy mixture forms. Add buttermilk and fold mixture with hand until dough becomes sticky. Place bowl in freezer for 15 mins. Add blueberries and fold into dough. Make into 8 balls on baking sheet and bake on 400 for about 15 mins, until biscuits are lightly golden brown, let biscuits cool for 10 mins. For the glaze whisk together powdered sugar, lemon juice, and vanilla extract.

**Chef's Note:- Toss Blueberries in 1 Tbsp of Flour to prevent them from sinking to the bottom of the biscuits, the flour helps to keep them evenly distributed during the baking process
-Before grating or cutting butter into chunks, place butter in the freezer for 10-15 min to prevent butter from softening
