Lemon Cheesecake Bites
Here is what you'll need!
Ingredients
3/4 cup graham cracker crumbs (7 graham crackers)
1 tablespoon brown sugar, packed
3 tablespoons unsalted butter, melted
12 ounces cream cheese, room temperature
1/2 cup granulated sugar
1/4 cup sour cream
3 eggs
1 teaspoon vanilla extract
3 tablespoons lemon juice
Blueberries & raspberries (to garnish)
Instructions
Preheat oven to 350°F / 175°C
Place baking cups in cupcake tin
In medium bowl combine graham crackers, brown sugar, and melted butter and stir to coat
Divide mixture and press into baking cups
Freeze crusts for 12-15 minutes or until hard
Stir cream cheese until smooth
Add granulated sugar, mix again, then add sour cream and mix
Add 1 egg at a time then add vanilla extract and lemon juice, stir until smooth
Fill chilled baking cups with cheesecake mixture
Bake for 20-22 minutes or until centers are firm
Remove and allow to cool for 15 minutes
Chill in refrigerator for at least 2 hours or eat room temperature
Garnish with raspberries and blueberries

►1/2 cup granulated sugar
►1 1/2 tsp vanilla extract
►2 cups all-purpose flour
►1/4 tsp salt
FOR THE LEMON FILLING:
►7 large eggs, room temperature
►3 cups granulated sugar
►2 Tbsp lemon zest (from 4 to 5 lemons)
►1 cup lemon juice, freshly squeezed (from 5 large or 8 medium lemons)
►1 cup all-purpose flour

Easy Lemon Cake Recipe ( 7 inch cake pan) :
115g room temp butter ( 1 stick)
100g Sugar ( ½ cup)
Zest of 2 lemons
2 room temp eggs
80g room temp Yogurt (1/3 cup)
60g room temp Milk (1/4 cup)
45g Lemon Juice (3tbsp)
160g Allpurpose Flour ( 1 cup + 2 tbsp)
2 tsp Baking powder
¼ tsp Salt
Lemon Cream Cheese Frosting:
150g Cream Cheese (5,5 ounces)
120g Heavy Cream ( ½ cup)
60g powdered sugar
1 tsp Vanilla

RECIPE:
2 cups rolled oats
1 1/4 cups oat flour
1 tsp cinnamon
3/4 tsp baking soda
1/2 tsp salt
1/4 cup ground flax seeds
1 scoop unflavored collagen peptides (substitute 1 scoop unflavored or vanilla plant based protein powder, for a vegan option)
2/3 cup apple sauce
1/3 cup maple syrup
1 ripe banana, mashed
1/3 cup coconut oil, melted
1 lemon, juiced and zested
2 cups fresh blueberries
Icing (optional)
1 tb lemon juice
1/4 cup powdered sugar
Preheat oven to 350F. Line a baking sheet with parchment paper and set aside. In a large mixing bowl, add the dry ingredients (top of the list through the collagen). Stir to combine. Then add the wet ingredients, mix, and then gently fold in the blueberries. Use a cookie scoop to form 18 cookies. With a wet/greased spatula, flatten each bite (they won’t spread). Bake for 10-11 minutes. They will be soft when they come out of the oven but will firm up! Once cool, make the icing—mix the lemon juice with powdered sugar—then add a little drizzle to the top of each bite. Transfer to a covered container and store in the fridge for up to one week (or in the freezer for up to 2 months).
